minutesAppetizers are always a challenge. First and foremost, I’m always looking to prepare something quick, tasty, and with a large enough yield to feed more people. I’ve found that bite-sized appetizers are the way to go, as they’re delicious both hot and cold. I’ve always loved recipes with cheese, and I often choose combinations that include it. This time, however, I opted for chicken and spinach puff pastry bites—of course, with plenty of cheese. I invite you to follow the recipe step by step to see just how simple and easy they are to prepare.
Ingredients
300 g chicken breast
30 g of spinach
100 g of mushrooms
240 g puff pastry
150 g mixed cheeses
50 ml heavy cream
30 g of butter
dill and parsley (optional)
*season to taste with: salt, ground black pepper, sweet paprika, oregano, chicken seasoning mix
Directions
- The quantities I’m presenting today were enough for 11 pieces. Technically, I should’ve ended up with 12, but I miscalculated a little while cutting. 🙂 It happens sometimes, but what matters is the final result. Also, I only calculated the quantities for half a package of dough, as that’s all I had. If you’re looking to make more than 11 pieces, simply double the quantities of the ingredients.
- To make my work easier, I decided to use a food processor. I chopped the ingredients that required this step one by one: chicken, mushrooms, spinach, dill, and parsley. If you happen to have a few cloves of green garlic or some green onions, feel free to chop them along with the herbs.
- In a non-stick pan, I added the butter and 2 tablespoons of oil, followed by the minced chicken and spices. I cooked everything over medium to high heat until the chicken was lightly browned, stirring constantly to avoid burning the meat. Then, I added the chopped mushrooms on top of the cooked meat and continued cooking until they softened slightly.
- Last but not least, I added the cream and chopped greens to the pan. I tasted it to check if it needed more seasoning and added a little more salt and pepper. I cooked the mixture until the liquid evaporated almost completely, as we don’t want it to flow from the dough. I then left the mixture to cool for 15 minutes, stirring occasionally.
- The aroma of the mixture is delightful, and I’m happy with the combinations I made. After the mixture cooled, I poured it over the sheet of puff pastry. I also placed slices of cheese here and there; you can use grated cheese directly if you prefer.
- As I mentioned at the beginning, I got 11 servings. If you’re a little careful, you’ll definitely get 12. I carefully rolled out the puff pastry, then cut it into pieces suitable for my muffin pan. On top, I sprinkled cheese again, this time grated.
- I baked the Chicken and Spinach Puff Pastry Bites for 25-30 minutes at 180 degrees. However, after 15 minutes, I chose to change the baking method and turned off the heat from above to avoid excessive browning of the cheeses.
- You can’t imagine how good it smells in the house—green chicken, cheeses, and crispy baked dough—an absolutely brilliant combination. I had no patience and opened a Chicken and Spinach Puff Pastry Bite as hot as it was. How beautifully the cheese spreads!! Just gorgeous!
- And because often such appetizers go wonderfully with some sauces, my choice was a mayonnaise with sriracha that perfectly complemented the Chicken and Spinach Puff Pastry Bites.
