minutesIt’s no secret that I’m a big fan of everything that involves cheese. Whether it’s a sweet or savory dish, for me, they are equally delicious. This time, I present to you a very quick dessert with a surprisingly delightful taste. Chocolate, cheese, and nuts always make a great team, so why not combine them all in a quick dish, allowing everyone in the house to enjoy a unique treat? Ingredients
600 g fresh cow’s cheese (unsalted)
5 eggs
120 g flour
150 g Greek yogurt
150 g powdered sugar
50 g of melted butter
1/2 teaspoon of baking powder
30 g raisins (optional, but recommended)
a pinch of salt
vanilla
Glaze and decoration:
2 tablets of milk chocolate150-200 ml of liquid cream (start with 150)
50 g walnuts
Directions
- I didn’t need much time to prepare the ingredients. It actually took longer to arrange them for the picture. I soaked the raisins (if you use them) in water with rum essence. You can replace them with cranberries or any other candied fruit you like.
- For the next step, I needed a large bowl and a hand mixer. You can also use a regular mixer or a food processor. In the bowl, I added the cheese, powdered sugar, eggs, vanilla, yogurt, a pinch of salt, and melted butter. I mixed everything with the mixer until I achieved a smooth and fluid consistency.
- I added the raisins, well-drained, and mixed everything well. I sifted the flour and baking powder over the mixture and gently incorporated them with the help of a spatula. I poured the resulting batter into a 30 x 12 cm cake pan.
- I baked the cake at 180°C for 35-40 minutes. Depending on your oven, the baking time may vary. When it’s ready, it looks wonderful, having risen beautifully like a soufflé, with cream on top. The aroma is sensational throughout the entire house! As it cools, the cake will shrink a little. Don’t worry, that’s completely normal.
- After it cooled down almost completely (I couldn’t wait any longer), I took the cake out of the pan and placed it on a cooling rack. I prepared the chocolate glaze with whipped cream using a bain-marie and poured it over the cake. In a pan, I lightly toasted the walnut kernels, chopped them, and sprinkled them on top.
- You can’t imagine how quickly this dessert disappeared. My family, and even the neighbors, loved it very much. For the next time, they insisted on a double batch!
