minutesLately, I’ve been using bulgur more and more often, and I really love how easily it can turn a simple meal into something incredibly delicious. If you haven’t tried it yet, bulgur is a type of parboiled, cracked wheat that’s widely used in Middle Eastern and Mediterranean cuisine. It cooks relatively quickly, absorbs flavors beautifully, and, unlike rice, has a slightly chewy texture and a subtle nutty flavor.
This time, I combined it with golden-browned pork, a few vegetables, and some well-charred zucchini cooked on the grill, finished with garlic and a little lemon. And honestly, I really loved the combination.
The bulgur absorbs all those delicious flavors from the pan, the pork adds a hearty element, while the golden-browned zucchini brings a subtle smoky, caramelized flavor that makes the whole dish even more interesting. The garlic and lemon at the end bring everything together beautifully.
It’s a simple, hearty, and flavorful meal, perfect for those days when you want something delicious without spending too much time in the kitchen.

Ingredients
- For the Pork and Bulgur
400 g pork, preferably pork neck, leg, or shoulder
250 g bulgur
1 large onion
1 large carrot
1 kapia pepper or bell pepper
3 garlic cloves
2 tablespoon oil
500 ml hot water or vegetable stock
1 teaspoon sweet paprika
teaspoon dried thyme
salt and pepper, to taste
1 tablespoon tomato paste (or chopped tomatoes), optional
fresh parsley, for serving
- For the Garlic Zucchini
1 medium-large zucchini
1 tablespoon olive oil
2 garlic cloves
½ teaspoon oregano or thyme
salt and pepper, to taste
Preparation method
- A Few Things to Keep in Mind
Bulgur is not rice.It’s made from parboiled, cracked wheat and usually has a relatively short cooking time. That’s exactly what makes it so practical for everyday meals.
Browning the meat makes all the difference. The crust that forms at the beginning adds plenty of flavor, while those little browned bits left on the bottom of the pan will add even more depth to the bulgur as it cooks.
The amount of liquid may vary. The 500 ml listed in the recipe works well for bulgur varieties with a cooking time of around 10 minutes, but it’s always worth checking the instructions on the package as well.
We want the zucchini golden-browned, not steamed. Thicker slices and a well-heated pan will help you get beautifully browned edges while keeping the inside tender.
- Preparing the Pork
Cut the pork into 2–3 cm pieces, then pat them dry with paper towels to remove any excess moisture.
Heat a large skillet over medium-high heat, add the oil, and arrange the pork in a single layer. Brown the meat, turning the pieces as needed, until nicely seared on all sides.
If the pan is too crowded, brown the pork in two batches. Once nicely browned, transfer it to a plate and set aside.

- Cooking the Vegetables
In the same skillet, add the finely chopped onion, grated carrot, and diced pepper. Add a little more oil if needed and cook for about 5–6 minutes, until the vegetables begin to soften.
- Add the minced garlic, paprika, and thyme, and stir briefly. If using tomato paste, add it now and cook for about 1 minute.


- Cooking the Bulgur
Quickly rinse the bulgur, then add it to the pan with the vegetables. Stir for about 1 minute, just enough to coat the grains with all those delicious flavors.
Pour in the hot water or vegetable stock, season with salt and pepper, and return the browned pork to the pan.
Cover and simmer over low heat for about 10–12 minutes, depending on the type of bulgur you’re using. Stir occasionally, just to make sure the bulgur cooks evenly and absorbs the liquid.

- If there is still a little liquid left at the end, continue cooking uncovered for another 2–3 minutes. Turn off the heat and leave the pan covered for another 5 minutes. Finally, fluff the bulgur gently with a fork and stir in the fresh parsley.


- Preparing the Zucchini
Wash the zucchini and cut it lengthwise into slices about 1 cm thick. Place the slices in a bowl, add the olive oil, salt, pepper, and oregano or thyme, and toss gently to coat.

- Heat a grill pan over high heat and arrange the zucchini slices in a single layer. Cook for about 3–4 minutes on each side, until nicely browned and marked with those beautiful grill lines.
In a small bowl, mix the crushed garlic with a little water, a pinch of salt, and the parsley. Once the zucchini is ready, lightly brush the slices with the garlic mixture. You don’t need too much—the goal is to let the flavor of the beautifully browned zucchini shine through as well.

- Serving
Spoon the pork and bulgur onto plates and add a few slices of grilled zucchini on the side. Sprinkle with fresh parsley and, if you like, finish with a few drops of fresh lemon juice.

- Storage
Store the pork and bulgur in an airtight container in the refrigerator for up to 3 days. The zucchini is best enjoyed fresh, but it can also be stored separately and quickly reheated in a grill pan.
