minutesImagine waking up to the smell of warm spices, sweet pumpkin, and freshly made waffles filling your kitchen. These roasted pumpkin waffles are everything we love about autumn: fluffy, tender, beautifully golden, and bursting with cozy flavors. Pumpkin purée gives them a lovely color and extra moisture, while cinnamon, vanilla, and ground ginger add a delicious warmth to every bite.
They’re perfect for a slow weekend breakfast, served with a cup of coffee or a glass of milk, but they’re just as wonderful as an afternoon treat. You can even pack them in a lunchbox, as they taste just as good once cooled.
This time, I served them with silky mascarpone cream, luscious salted caramel, and crunchy walnuts. It’s an irresistible combination that transforms these simple waffles into a truly special dessert. Of course, they’re just as delicious on their own, dusted with powdered sugar, drizzled with a little honey, or served with fresh fruit.

- Tips for Fluffy, Flavorful Waffles
Use well-drained pumpkin purée. Excess moisture can make the batter too wet and prevent the waffles from browning properly. Avoid overmixing the batter. Once you add the flour, stir just until the ingredients are combined.
Make sure the waffle iron is fully preheated before cooking. This helps the waffles cook evenly and develop a beautiful golden color. Don’t stack the waffles immediately after cooking. Instead, place them on a wire rack to prevent steam from building up and making them soggy.
- Mix the Wet Ingredients
In a large mixing bowl, whisk the eggs and brown sugar until the mixture is smooth and slightly frothy.
Add the roasted pumpkin purée, milk, melted and cooled butter, and vanilla extract. Mix well until all the ingredients are thoroughly combined.

- Add the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and ground ginger, if using.
Add the dry ingredients to the pumpkin mixture and gently stir just until no streaks of flour remain.
The batter should be thick and creamy, but still slowly drip off a spoon. If the pumpkin purée is particularly thick, add another 1–2 tablespoons of milk. Avoid overmixing to keep the waffles as light and fluffy as possible.

- Cook the Waffles
Preheat the waffle iron and lightly grease the plates with a little butter or oil, if needed.
Pour the batter into the waffle iron, being careful not to overfill the molds. Close the lid and cook each waffle for about 3–5 minutes, depending on your appliance, until golden brown and easy to remove.
Avoid opening the waffle iron too early, as the waffles may tear before they are fully cooked.

- As each waffle is ready, transfer it to a wire rack and arrange it in a single layer. This allows the steam to escape and helps keep the outside from becoming soggy too quickly. Continue cooking until all the batter has been used.

- Assemble and Serve
Arrange the waffles on plates and top with mascarpone cream. Drizzle with salted caramel and sprinkle with toasted walnuts. For an extra touch of flavor, add a little ground cinnamon or a few flakes of sea salt.
For a simpler option, dust the waffles with powdered sugar or drizzle with a little honey. They’re also delicious on their own, especially when freshly made and still warm.

- These waffles are perfect for breakfast, brunch, an afternoon snack, or dessert. Serve them warm with a cup of coffee, a cappuccino, a glass of milk, or a fragrant cup of tea. They’re also great for lunchboxes once they’ve cooled completely. If packing them to go, I recommend keeping any toppings that require refrigeration separate and adding them just before serving.

- How to Store
Plain waffles: Allow the waffles to cool completely, then store them in an airtight container in the refrigerator for up to 3 days.
Freezing: Cooked and cooled waffles can be frozen for up to 2 months, with sheets of parchment paper between them to prevent sticking. To serve, reheat them straight from frozen in the waffle iron or toaster until warm and lightly crispy.
