minutesSome dishes capture all the warmth and comfort of autumn in a single pan, and this creamy orzo with chicken meatballs is one of them!
But before it makes its way to our plates, orzo has a story of its own.
Although it resembles grains of rice, orzo is actually a small, rice-shaped pasta that has long been enjoyed in Italian cuisine. Its name means “barley” in Italian, and its delicate shape has made it a favorite in soups, side dishes, and one-pot meals where the pasta absorbs the flavors of the ingredients around it. In Greece, it is known as kritharaki and is often used in traditional dishes featuring tomato sauce and meat.
Today, this tiny pasta is enjoyed in kitchens around the world, proving that you don’t need complicated ingredients to create something special.
In my recipe, orzo becomes the star of a creamy, comforting dish. Tender chicken meatballs add plenty of flavor and substance, spinach brings a fresh touch, and roasted pumpkin ties everything together with its natural sweetness and warm, earthy flavor—perfect for crisp autumn days.
This isn’t a strictly traditional Mediterranean recipe, but rather my own take on a comforting pasta dish. It brings together a beloved ingredient from Mediterranean cuisine, seasonal produce, and the simple pleasure of a delicious homemade meal.
Let me show you how I made it!
Ingredients
- For the Chicken Meatballs
500 g ground chicken
1 egg
2 tablespoons finely ground oats
2 garlic cloves, finely minced
125 g fresh mozzarella, well drained and crumbled
1 tablespoon fresh parsley, chopped (optional)
Salt and black pepper, to taste
1 tablespoon olive oil, for frying
- For the Creamy Orzo
300 g orzo
300–400 g pumpkin diced
50–100 g roasted pumpkin purée, prepared in advance
100 g sun-dried tomatoes, chopped
150 g fresh or frozen spinach
2 garlic cloves, finely minced
50–75 ml cooking cream
Approximately 700–850 ml warm chicken stock
60–70 g grated Parmesan
1 tablespoon olive oil
Salt and black pepper, to taste
Preparation method
- Tips for Perfectly Creamy Orzo
Add the chicken stock gradually, in one or two additions, and stir frequently to prevent the pasta from sticking to the pan. To help the pumpkin cubes hold their shape, cook them separately and add them at the very end. For tender, juicy chicken meatballs, make sure to drain the mozzarella thoroughly before adding it to the mixture.
For reheating: Store the dish in an airtight container in the refrigerator for 2–3 days. Add a little water or chicken stock when reheating, as the orzo will continue to absorb liquid as it sits.
- Prepare the Chicken Meatballs
In a large bowl, combine the ground chicken with the egg, finely ground oats, garlic, well-drained and crumbled mozzarella, parsley, salt, and black pepper.
Mix until everything is evenly combined and let the mixture rest for a few minutes. Then shape it into meatballs approximately 3–4 cm in diameter.

- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook, turning them on all sides, until nicely browned and cooked through. Transfer them to a plate and set aside.

- Roast the Pumpkin Cubes
Arrange the pumpkin cubes on a baking sheet lined with parchment paper. Drizzle with a little olive oil and season with salt, black pepper, and thyme.
Roast in a preheated oven at 200°C (400°F) for approximately 20–25 minutes, until the pumpkin is tender and lightly golden. Remove from the oven and set aside.

- Prepare the Flavorful Orzo Base
In the same skillet used to cook the chicken meatballs, add a little more olive oil if needed. Add the finely minced garlic and sauté for about 30 seconds, just until fragrant, taking care not to let it burn.
Add the chopped sun-dried tomatoes and thyme, then stir for about a minute to allow the flavors to meld. Add the orzo and stir for another 30–60 seconds, allowing the pasta to absorb all the delicious flavors in the skillet.
- Cook the Orzo Until Creamy
Pour in approximately 700 ml of warm chicken stock and add the roasted pumpkin purée. Stir well and simmer over medium-low heat, stirring frequently, for about 10–12 minutes or according to the package instructions.
As the orzo absorbs the liquid, gradually add more warm stock as needed. Continue stirring until the pasta is tender and the sauce becomes rich and creamy.

- Add the Chicken Meatballs, Parmesan, and Cream
Return the cooked chicken meatballs to the skillet. Stir gently and let everything cook for another 1–2 minutes, allowing the ingredients to heat through and the flavors to meld.
When the orzo is almost ready, stir in the cooking cream and grated Parmesan. Mix until the sauce is smooth and creamy, then season to taste with salt and black pepper.

- Add the Spinach and Roasted Pumpkin
Add the spinach and stir until wilted. If using frozen spinach, allow it to cook thoroughly and let any excess liquid evaporate.
Gently fold in the roasted pumpkin cubes, then remove the skillet from the heat.

- Serve the Creamy Orzo
Serve immediately while the orzo is warm and creamy, topped with freshly grated Parmesan, black pepper, and a little thyme or fresh parsley.
The result is a comforting, flavorful dish featuring tender chicken meatballs, creamy orzo, and lightly roasted pumpkin cubes.

- Storage and Reheating
Store any leftover orzo in an airtight container in the refrigerator for 2–3 days. Be sure to refrigerate it within two hours of cooking.
To reheat, add 1–2 tablespoons of water or chicken stock and warm the dish over low heat, stirring gently until heated through. Orzo continues to absorb liquid after cooking, so adding a little extra stock helps restore its creamy texture.
