Or, even better, if you have little ones around, you can get them involved too. Shaping and decorating the balls can easily become the most fun part of the whole activity.
What I love most about this recipe is that you don’t have to be too precise about how they look. Shape the balls, roll them in coconut, cocoa, pistachios, or grated chocolate, and with very little effort, you’ll have a beautiful platter of bite-sized desserts.

Ingredients
400 g digestive biscuits or plain tea biscuits
40 g cocoa powder
100 g powdered sugar
100 g dark chocolate, 50–70% cocoa
120 ml milk
100 g butter
70 g shredded coconut
1–2 teaspoons rum extract
a pinch of salt

Crush the biscuits in small batches. This makes it easier to achieve an even texture and gives you better control over how finely you crush them.
Use chocolate with at least 50% cocoa. A more intense chocolate flavor balances the sweetness of the biscuits and powdered sugar.
Add the rum gradually. You can easily adjust the flavor depending on your preference.
Let the mixture cool before shaping. After about 30 minutes in the refrigerator, the butter and chocolate will firm up slightly, making the balls much easier to shape.
Prepare the balls ahead of time. After a few hours in the refrigerator, the flavors have more time to blend, and the texture becomes even more enjoyable.
- Crushing the Biscuits
Break the biscuits into smaller pieces and place them in the bowl of a food processor. Process them quickly in small batches, using short pulses, until you have a fine crumb.
- Transfer the biscuits to a large bowl. Add the cocoa powder, powdered sugar, shredded coconut, and salt, and mix all the dry ingredients well.

- Preparing the Chocolate Mixture
Place the chocolate and butter in a heatproof bowl and melt them over a double boiler or in short bursts in the microwave.
Stir until smooth and glossy. Let the mixture cool slightly for 2–3 minutes, then add the milk and rum extract.
- Forming the Mixture
Pour the chocolate mixture over the crushed biscuits and mix until all the ingredients are well incorporated.
Add the rum extract and mix again. The mixture should be dense, but soft enough to shape.
The shredded coconut will absorb some of the moisture as the mixture cools, so don’t rush to add more biscuits if the mixture seems slightly soft immediately after mixing.
Refrigerate the bowl for about 30 minutes. Once chilled, the mixture will become firmer and easier to shape.

Portion the mixture and shape it into balls of about 25 g each. Roll them between your palms to smooth them out, then coat them in your chosen topping.
You can use shredded coconut, cocoa powder, finely chopped pistachios, or grated chocolate.
