I love recipes that manage to turn the simplest ingredients into something truly special. Watermelon rind jam is one of them. Every time we eat a watermelon, the white part almost always ends up in the bin, even though it can be turned into a wonderful jam, with translucent cubes and a clear syrup delicately scented with lemon and vanilla.

It is one of those old-fashioned recipes made patiently, from a time when nothing went to waste and every ingredient had its place in the pantry. I find it fascinating how something so simple can result in something so elegant.

Besides being delicious served with pancakes, papanasi, or yogurt, I also use this jam in cakes and desserts. The cubes hold their texture beautifully, while the delicate watermelon and vanilla flavor pairs perfectly with fluffy cake layers, loaf cakes, or cream cheese fillings. It is one of those little ingredients that can transform an ordinary dessert into something truly special.

Ingredients

  • For approximately 4–5 jars (400 g each), you will need:
  • 2 kg watermelon rind (white part only, completely trimmed of the green skin and red flesh)

  • 1.5 kg sugar

  • 700 ml water

  • juice of 1 lemon

  • 1 vanilla bean or 1 teaspoon vanilla extract (optional)

  • For blanching:
  • approximately 3 liters of water

  • 350 ml 9% white vinegar

  • Start by washing the watermelon thoroughly before cutting it. Remove the green outer skin completely, leaving only a small amount of red flesh, while keepingthe white rind.   • Bring approximately 2 liters of water and the vinegar to a boil. Once the liquid starts boiling, add the watermelon rind pieces and cook for 5–7 minutes.oparire coji de pepene 1oparire coji de pepene 2
  • Remove the watermelon rind pieces with a slotted spoon and repeat the process three more times, using fresh water and vinegar each time. Finally, rinse the pieces thoroughly under cold water.   • In a large saucepan, combine the sugar and water and cook over medium heat until the sugar has completely dissolved and the syrup begins to thicken slightly.

  • Towards the end of the cooking time, add the lemon juice and vanilla, then continue cooking for approximately 5 minutes.
    To check if the jam is ready, place a drop of syrup on a cold plate. If it holds its shape and does not immediately run, the jam is ready.   • Watermelon rind jam is delicious served with pancakes, papanasi, yogurt, or vanilla ice cream. I also use it quite often in desserts, especially in cake layers or paired with delicate cream cheese fillings.
