minutesI’m not a big fan of meatballs, so when I prepare them, I try to make them according to my taste, taking inspiration from various recipes. I proudly admit that these chicken meatballs were so tasty that they quickly disappeared from the plates.
Many people love meatballs and there are dozens of possible variants. They are prepared from different types of meat, vegetables, and even cheeses. In the vast majority of cases, the meatballs are fried in oil, but more recently they are also baked. As is the case with those in this recipe. With a little inspiration from Greek cuisine but also from the recipe of some wonderful ladies from Romania, I also prepared these meatballs with cheese, olives and peppers in the oven. Let me show you how I did it!
Ingredients
400 g Boneless chicken thighs
200 g chicken breast
100 g matured cheese (cow, sheep)
80 g of smoked cheese
100 g of pepper (preferably red)
50 g pitted olives
green onion (only the green part)
2 tablespoons of semolina
1 egg
garlic (to taste)

dill and fresh parsley
oregano
2 tablespoons of oil (for greasing the meatballs)
salt and pepper to taste
Directions
- As you can see, I used very small amounts of ingredients. Basically because I wasn’t sure what I would get. Something I regretted as soon as I tasted the first meatball. That’s why I advise you to at least double the quantities.
- In order to make my work easier and of course not to waste too much with the preparation, I used a food processor. In this bowl, I put the chicken meat (cut with a knife into smaller pieces), egg, garlic, greens, semolina, salt, pepper, and oregano. I mixed everything very well until I obtained a homogeneous composition.
- I moved the composition to a large bowl, to be able to add the rest of the ingredients. I chopped the pepper, cheeses and olives as small as possible with a knife. I then mixed carefully, until I incorporated everything. I let it rest on the kitchen table for 15 minutes.
- Wet your palms with water and start shaping the meatballs. Depending on how big or small you like them, shape them as you wish. I obtained 35 small meatballs (be careful, they reduce their volume considerably in the oven) which I placed in a pan lined with baking paper. I greased the meatballs with oil and baked them for 15-20 min at 200 G.
- Well, I’m very glad that I managed to take their picture! You can’t imagine how quickly they were eaten. I also prepared a salad and a yogurt sauce with garlic, but I can honestly say that it didn’t really matter, they were eaten empty. I invite you to try them and tell me your opinion.
