minutesToday I come with a recipe like “I would like to eat something good, fast and delicious” Hmm…after a little research of the ingredients in the fridge and kitchen, this was the final result. This dish is ideal when you feel a little lazy, or maybe you are too busy and don’t have time to cook, but you still have to eat. The salad I propose is ideal both as a snack and as a tasty breakfast.
Ingredients
2 cans of tuna in its own juice (drained)
50 g corn
1 diced cucumber
1 diced tomato
1 finely chopped red onion
3 avocados
40 g pitted green olives, finely chopped
olive oil
the juice of a lemon
salt
pepper
Directions
- Now! You don’t have to be Sherlock Holmes to realize that, once you have all the chopped ingredients, you combine them in a bowl, season to taste and that’s it! Easy-peasy in two strokes and three moves! Okay…actually more moves but, the result will be as expected. 😉 I served the salad with rice rounds placed on a bed of baby spinach. I put a little balsamic vinegar cream on top, but you can leave it out if you don’t like it! Enjoy!
