Easy homemade crispy chicken strips

minutesI came up with this recipe because I was fed up with the excessively dry chicken crispies, with only a “shadow” of chicken that I used to buy in stores. Of course, I used the most usual ingredients, which I can have at hand whenever I want to repeat the recipe. I wanted a crispy with juicy chicken and salty corn crust but not excessively oily. Let me show you what I manage to do!
Ingredients
800 g chicken breast
3 eggs
250 – 300 g flour
juice from a lemon
5 tablespoons Greek yogurt + 2 tablespoons for the eggs mixture
1 teaspoon smoked sweet paprika
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon sare
1/2 teaspoon pepper
1/2 teaspoon chilly flakes (optional)
1 teaspoon of oregano
500-600 g sugar-free corn flakes
oil for frying
150 g breadcrumbs
Directions
- Right from the beginning, I suggest you to organize your time well. In order for this crispy chicken to be as tender as possible, it needs that “rest” time in the refrigerator. So, we cut the chicken breast nicely into the thinnest but not exaggerated strips, otherwise we just get those dry things from the store. We want to feel the texture of the meat with every bite.
- In a bowl, break the eggs and add the rest of the ingredients, minus the eggs, the cornflakes and the breadcrumbs. We also squeeze the juice from a lemon, this together with the yogurt will tenderize the chicken meat.
- Add the chicken strips over the yogurt mixture and mix them together. Make sure to cover every single bit of chicken. Transfer everything into a casserole, cover with lid or foil and let it sit over night. If you don’t have patience, you can leave it for at least 3-4 hours. The idea is that the longer it sits, the more tender it becomes.
- After the rest period has passed, we move on to the next stage. I crushed the cornflakes using a food processor, added the breadcrumbs on top of them and mixed them well. We pour half of the mixture into a pan, we will add the rest along the way. In another pan, add the flour.
- Mix the eggs in a bowl with 2 tablespoons of yogurt and a little more of each of the spices used in the chicken marinade. It is an optional part, but I do it because I taste everything first and the chicken marinade was not very salty.
- We pass the strips of chicken meat one by one through the flour, eggs and breadcrumbs. I prefer to finish making all the chicken and place it on a wood chopper, because it seems to me that everything is much more organized. I can then fry them without stopping to waste time forming other crispies.
- We fry crispy chicken in a pan in which we add oil until it reaches half of their thickness. We don’t pour excess oil and we don’t crowd the pan with the chicken strips. We fry patiently in a trance until we finish everything.
- No that my dear friend is good looking crispy chicken strip! It has flavor, crispy and juicy meat. What more can you ask? You can serve them plain, with garlic sauce or, as I did, on a plate with vegetables and meatballs!
