
Delicious cauliflower pudding with cream cheese and bacon
If you are not a big fan of cauliflower, this is the recipe that will make you change your mind and at the same time, which you wish you had known earlier.

minutesI can’t say with certainty that I’m a big fan of cauliflower. Until recently, I limited myself to 2-3 dishes, which I knew for sure that I liked. However, it becomes boring to limit yourself and the desire to try something new is great. So, I decided to use cauliflower in combination with 2 ingredients I love: cheese and bacon. What could go wrong? Well, absolutely nothing! The final result: a delicious and creamy pudding with cauliflower, cheese and smoky bacon. Check it out!
Ingredients
550 g cauliflower
180 g cream for cooking
130 ml cold milk
80 g Greek yogurt
1 tablespoon of cornstarch
3 eggs
3 tablespoons finely grated parmesan
40 g grated smoked cheese
200 g cream cheese
80g of bacon
80 g grated cheese (for the crust)
80 g of butter – for greasing the mold and for the crust
salt, pepper, mix of aromatic herbs to taste.
1 teaspoon garlic powder
Directions
- I used already boiled cauliflower, I had prepared it for a salad but I didn’t use all of it. Boil it very easily, for about 10 minutes in salted water, then let it drain to cool. If you wish, you can also use broccoli together with the cauliflower.
- We start by turning on the oven at 200 g, because it won’t take long to assemble all the ingredients. Grease an ovenproof pan with a little butter. Cut the cauliflower into smaller pieces and place it in the pan. Sprinkle the diced bacon on top.
- In a separate bowl, mix eggs and spices, mix them well. Add the yogurt, the cream cheese, the cheese, the milk and the starch that we previously dissolved with a little cold milk. I always taste salt and pepper, I added a little more salt and pepper.
- Pour the mixture obtained in the pan over the cauliflower and bacon. Level with a spatula or spoon. Sprinkle parmesan and the rest of the cheese on top. Add strips of butter from place to place and put the pan in the oven for 35-45 minutes, or until it acquires a beautiful golden-brown color.
- We serve the pudding as soon as we take it out of the oven. It is delicious so hot, but it is also very good the next day at room temperature. Of course, when served hot, we cannot get perfectly cut portions, but that is not important, but the taste. For more flavor, sprinkle Parmesan and freshly ground pepper. Enjoy!
