minutesThis recipe is one of those desserts that’s especially close to my heart. It came from my love of having something really delicious alongside my coffee—something I can enjoy in the morning or during that little coffee break in the middle of the day.
For me, coffee is a small ritual, and I love having something sweet and homemade to enjoy with it. And when the dessert is exactly the kind I love, the whole moment becomes even more special. So I created my own version of a loaf cake, with all my favorite flavors: rich chocolate, juicy plums, warm cinnamon, and just a touch of coffee in the batter.
Plums and chocolate are one of my favorite combinations when it comes to fall desserts. The plums bring freshness and a subtle tartness, while the chocolate adds that deep, rich flavor that complements them so beautifully.
This isn’t an overly sweet dessert. Instead, it has a rich, well-balanced flavor that pairs wonderfully with the aroma of coffee. And the silky mascarpone and cream cheese frosting, with its gentle tanginess, is the perfect finishing touch for the chocolate and plum cake.
I hope I can convince you to give it a try at least once, because to me, this is exactly the kind of dessert that’s worth making. Especially if, like me, you’re a coffee lover.
So, let me show you how I made it…
Ingredients
- This recipe makes two loaf cakes, using approximately 24 × 8.5 × 8 cm loaf pans.
- For the Chocolate and Plum Loaf Cake
6 eggs, at room temperature
350 g plums, pitted
300 g all-purpose flour
50 g unsweetened cocoa powder
180 g dark chocolate or your favorite chocolate
150 ml vegetable oil
190 g brown sugar
2 teaspoons vanilla extract
1½ teaspoons ground cinnamon
1 teaspoon instant coffee or espresso powder
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
- For the Mascarpone Cream
250 g mascarpone, chilled
200 g cream cheese, chilled
90 g powdered sugar
1 teaspoon vanilla extract
finely grated zest of ½ lemon or orange
Preparation method
- For the chocolate, I used Sweeteria vegan milk chocolate made with rice milk and a natural sweetener, but you can absolutely use your favorite chocolate instead.
Wash the plums, remove the pits, and place them in a blender. Blend until you have a very smooth purée.
If the plums are particularly juicy, transfer the purée to a small saucepan and cook over low heat for 5–8 minutes, stirring occasionally.
We’re not trying to make jam here—just to remove some of the excess moisture. The purée should be thick and creamy rather than runny.
Let it cool completely before using. This step is important for the final texture of the loaf cake. Too much moisture from the plums can make the batter heavy and increase the baking time.

- Melting the Chocolate
Break the chocolate into pieces and melt it in a heatproof bowl set over a pot of simmering water, or in short bursts in the microwave.
Let it cool for a few minutes. It should remain fluid, but it shouldn’t be hot when you add it to the batter.
- Beating the Eggs and Sugar
Place the eggs and brown sugar in a large mixing bowl. Beat for 4–5 minutes, until the mixture becomes lighter in color, foamy, and visibly increases in volume.

- Adding the Wet Ingredients
Gradually pour in the oil, mixing on low speed. Add the vanilla and cooled plum purée, then mix until well incorporated.
Next, pour in the melted and cooled chocolate and mix until the batter is smooth and uniform.
- Adding the Dry Ingredients
In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, cinnamon, and instant coffee.
Add the flour and cocoa mixture in 2–3 batches. Gently fold it in with a spatula, mixing just until you no longer see any dry flour.
Avoid overmixing at this stage. If using nuts, add them at the end and gently fold them in with just a few strokes. The batter will be fairly thick and creamy.

- Dividing the Batter Between the Pans
Divide the batter as evenly as possible between the two loaf pans and gently smooth the surface.
Do not fill the pans more than about two-thirds full, leaving enough room for the loaves to rise as they bake.
- Baking the Loaf Cakes
Place the pans in the preheated oven at 170°C (340°F) and bake for approximately 40–50 minutes.
Start checking after 40 minutes. Insert a toothpick into the center of the loaf; it should come out with a few moist crumbs attached, but no wet batter.
We don’t want to bake the loaves until the toothpick comes out completely clean. For this recipe, we’re aiming for a tender, moist texture, and overbaking can make the cake drier.
If the two pans don’t fit on the same oven rack, it’s best to bake them one at a time.
- Cooling the Loaf Cakes
Leave the loaf cakes in the pans for about 10–15 minutes. Then, using the parchment paper, carefully lift them out and transfer them to a wire rack. Let them cool completely before adding the cream.
It’s important that the cakes are completely cool. If they’re still warm, the mascarpone cream can soften and won’t hold its shape nicely on top.
- Making the Mascarpone Cream
Place the mascarpone, cream cheese, powdered sugar, and vanilla in a bowl. Mix on low to medium speed just until the cream is smooth and firm enough to spread.
Add the finely grated lemon or orange zest and mix briefly. Avoid overmixing, as the mascarpone can become unstable. If the cream seems too soft, refrigerate it for 20–30 minutes before using.
- Assembling and Decorating
Once the loaf cakes have cooled completely, divide the cream between them and spread it into a generous layer. There’s no need for the decoration to be perfect. A few swirls of cream, slices of fresh plum, a sprinkle of cinnamon, or some chopped nuts will give the loaves a simple yet tempting finish.

- Storage
Once the mascarpone cream has been added, store the loaf cake in the refrigerator in an airtight container or tightly covered.
For the best texture, take it out of the refrigerator about 15–20 minutes before serving.
If you’d like to prepare the cake ahead of time, the loaves can be baked and cooled before decorating. Add the cream and toppings closer to serving time.
