minutesOh well, on the principle of “summer vibes” πβ±οΈ because I kept seeing posts like that, why not, because nah…why should I be lower?π π Who doesn’t love sweets, wow…especially if they are aromatic and full of fruit and…without sugar. Yes, yes as you read, without sugar π I was asked to make a cake without sugar and I chose to make this wonderful strawberry cheesecake. Since the cake was given whole, logically I don’t have pictures of the section, but I assure you that it is full of fruit as you will see in the pictures below. Mmmm… I’ve talked enough, let’s move on to the beautiful part, ingredients and the recipe of course π
Ingredients
1 kg of strawberries
600 g cream cheese
500 g of unsweetened cream
400 g digestive biscuits (without sugar)
2 lemons
2 gelatin sachets
180 g of melted butter
5 sweetener lozenges (of your choice)
Directions
- To begin with, I crushed biscuits in a robot, for those who don’t have a robot, use the classic method “the fight is broken from Heaven” βοΈπ and pour out your nerves with what you have at hand ππ
I added the melted butter, gradually until I got a pretty texture soft to be shaped inside a removable tray. If necessary, you can add more butter, depending on the biscuits used. I chose a few strawberries of approximately the same size, sliced ββthem and placed them on the edge of the trays (see picture). I finely chopped 200 g of strawberries and put the rest in a saucepan on a low heat, with the juice of a lemon and the sweetener, just enough to soften a little. Whisk well to get a nice clear texture, this will be the face of our cake.
- Mix the cream cheese with the whipped cream, 1 sachet of gelatin (prepared according to the instructions on the package), the peel and juice of a lemon, the latter added gradually. Add half of the cream over the biscuits, then finely chopped strawberries and the rest of the cream on top. I kept a few spoons of cream for decoration, but it is everyone’s choice. We say a few prayers π
π€ and put it in the fridge for at least 2-3 hours, so that the cream hardens enough to hold the strawberry topping. I chopped the boiled strawberries with the blender and mixed them with 1 packet of gelatin, then put them on top of the cream cheese. I left everything in the fridge until the next day, then I carefully removed the ring and huh… it came out π€©πperfect! I decorated as desired and that’s it.
- From what I understand, it was eaten almost immediately π€great joy for me, yayyy! The greatest joy for me will always be the gratitude of those who eat my tasty dishes.
