
Delicious spring soup
A very controversial starter for Romanians, because there are few who can get over the fact that we find a fresh green salad in a soup. However, as soon as you taste it, you can’t stop and you will probably ask for another portion π
Green salad soup with smoked pig tails and sour cream

minutesI don’t even know how to describe this soup in words. It’s definitely the kind of food that you taste and feel like you’re alive, that would be the main feeling. Although this soup is specific to the North of the country, over time there have been versions adapted to each area of ββthe country, with small changes to some ingredients. For example, traditionally housewives use whey extracted from milk, this has been replaced with yogurt or sour cream. I personally prefer the last two options and add lemon juice, sour cabbage juice or sour borscht to the soup.
Ingredients
2 large pieces of lettuce
1,500 kg of smoked meat (I used smoked pig tails)
350 g heavy cream
4 egg yolks
1 yellow bell pepper
1 red pepper
1 sprig of leek
1 carrot
1 small parsnip
1 parsley root
1 small celery
3 green onions
fresh dill
1 package of concentrated borscht (or sour cabbage juice would be preferable)
salt, pepper to taste
Directions
- We prepare the vegetables, clean them and chop them finely. Cut the green salad into suitable strips, it will shrink a lot when it is added to the pot.
- Boil the meat, using a large enough pot. I used a 6 l pot. Do not forget to remove the foam that forms on the surface, in this way we get a clear soup without impurities.
When the meat is almost cooked, add the vegetables, minus the salad that is added after the rest of the vegetables have been cooked.- We are almost ready, finally add the green salad leaves, which will soften quickly. They should not boil for more than 2-3 minutes, depending on the texture of the salad we use. It’s time to give our soup a taste π we sour it to our liking, add salt and pepper, and then prepare the broth to give it a beautiful color. You already know the procedure: egg yolks, hot soup from the pot and cream, we mix them and then pour everything into the pot. Turn off the heat immediately, sprinkle with fresh dill and serve. π
