Cheesy chicken – how can you not love this combination? Tender and juicy chicken breast combined with cheese that melts quickly, Heaven on earth 🙂 I came across a similar recipe while looking for inspiration for a delicious lunch. I wasn’t really sure what I wanted to do, but I knew I had to use a chicken breast that was sitting sadly in the fridge. And to really spoil myself until the end, I added cheese to the dish, absolutely wonderful!!!
Ingredients
1 kg of chicken breast
100 g of goat cheese
50-60 g flour (almond flour if you are on a diet)
100 g mozzarella (or any cheese you want)
2 green onions
1/2 teaspoon basil
1/2 teaspoon of oregano
1/2 teaspoon dill
salt and freshly ground pepper to taste
3-4 tablespoons of oil for frying
2 eggs
Directions
- With the help of a sharp knife, I cut the chicken breast into very small cubes. I did the same with the mozzarella, and grated the goat cheese. If you use fresh herbs, chop them finely as well. Apart from green onions, I used frozen herbs.
- In a large bowl, add all the ingredients one by one and mix well. Season with salt and pepper, being careful not to overdo it if you use salty cheeses. Because we have raw chicken in the composition, it would be better to taste it after frying and add more seasoning if necessary.
- Add the oil to the pan and with the help of a large spoon, take part of the chicken mixture and put it in the pan, then press it lightly to form the fritters. Cook the cheesy chicken over low to medium heat, until they become golden and crispy on each side. Do not crowd the pan, fry one at a time until you finish the composition.
- Serve the cheesy chicken while it is warm and hot. I was planning to make potato wedges and garlic sauce on the side, but these fritters were eaten as soon as I took them out of the pan. Maybe you will have more success! Enjoy!
