Did you know that the much-loved Romanian Greek-style chicken soup has a close relative in Greek cuisine? It’s called avgolémono, a traditional soup made with chicken broth, rice or small pasta, and an egg-and-lemon mixture that gives it a delicate texture and a pleasantly tangy flavor.

Once it found its way into Romanian cuisine, however, the recipe developed a personality of its own. Sour cream joined the combination of eggs and lemon, while vegetables such as carrots, celery, parsnip, and bell pepper transformed it into a hearty, flavorful soup that feels much closer to our own culinary traditions. In other words, it has Greek roots but a distinctly Romanian character.

I find it fascinating how food brings different traditions and cultures together. Recipes travel, adapt, and evolve according to local ingredients and the preferences of the people who prepare them. And sometimes, these culinary encounters give rise to dishes that eventually feel as though they have always been our own.

Greek-style chicken soup is also a lovely example of comfort food, the kind of dish that brings the whole family together around the table. In many cultures, chicken soup is associated with care, warmth, and the feeling of home. The Greeks have their avgolémono, while we have our own beloved version, instantly recognizable by its creamy texture, aromatic vegetables, and fresh hint of lemon.

What I love most about this combination is the balance between the delicate flavor of the chicken, the natural sweetness of the vegetables, the creaminess of the sour cream, and the bright acidity of the lemon. It’s a simple yet incredibly delicious dish that I always enjoy preparing for a family lunch.

At the end of the day, whether we call it avgolémono or Romanian Greek-style chicken soup, one thing remains the same: some of the most wonderful recipes are those that make us feel at home.

Ingredients

  • 650 g boneless chicken thighs

  • 2 medium carrots

  • 1 large onion

  • 1 parsnip root

  • 1 parsley root

  • 150 g celeriac (celery root)

  • 1 red bell pepper

  • 1 green bell pepper

  • 100 g rice

  • 3 egg yolks

  • 200 g sour cream (20–30% fat)

  • Juice of 1 lemon, or to taste

  • 2–3 tablespoons vegetable oil

  • 1 bunch fresh parsley

  • 1 bunch fresh dill

Preparation method

  • Prepare the Vegetables and Chicken
Peel the carrots, parsnip, parsley root, and celeriac. Remove the seeds and white membranes from the bell peppers. Finely dice all the vegetables into small, evenly sized pieces, or grate them if you prefer a finer texture in your soup.
Peel the onion, but leave it whole so it can flavor the broth without breaking apart.
Trim any excess fat from the boneless chicken thighs, if necessary, but leave them whole for now. Keeping the chicken pieces intact while cooking helps them retain their moisture and makes them easier to remove, chop, and return to the soup later.Ciorbă de pui à la grec ingrediente
  • Sauté the Vegetables
Heat the vegetable oil in a large, heavy-bottomed pot over medium-low heat. Add the carrots, parsnip, parsley root, celeriac, and bell peppers. Sauté for 5–7 minutes, stirring occasionally, until the vegetables begin to soften and the carrots release some of their color into the oil.
Keep the heat moderate and avoid browning the vegetables. They should soften gently rather than develop a caramelized color. For this recipe, we leave the onion whole and do not sauté it, allowing it to add a delicate flavor to the broth during cooking.calire legume ciorba de pui a la grec 1calire legume ciorba de pui a la grec 2
  • Cook the Chicken and Vegetables
Add the whole chicken thighs and the peeled, whole onion to the pot with the sautéed vegetables. Pour in enough hot water to cover the ingredients generously, approximately 2.5–3 liters, depending on the size of your pot and how much broth you prefer.
Season with salt and freshly ground black pepper. Bring the soup to a gentle boil over medium heat, then reduce the heat to low and let it simmer for approximately 25–35 minutes, or until the chicken is completely cooked through and tender.
Boneless chicken thighs cook relatively quickly, but the exact cooking time depends on their size and thickness. If any foam forms on the surface, skim it off with a slotted spoon to keep the broth clear.Fierberea cărnii și a legumelor 1Fierberea cărnii și a legumelor 2
  • Cut the Cooked Chicken
Once the chicken is fully cooked and tender, carefully remove the thighs from the pot using a slotted spoon or tongs. Transfer them to a cutting board and let them cool for about 5 minutes, just until they are cool enough to handle.
Cut the chicken into bite-sized cubes, then return the pieces to the pot. This keeps the chicken tender while making it easy to enjoy in every spoonful of soup.Tăierea cărnii fierte de pui 1Tăierea cărnii fierte de pui 2
  • Add the Rice
Rinse the rice thoroughly under cold running water, changing the water 2–3 times, until it runs mostly clear. Drain well, then add the rice to the simmering soup.
Cook over medium-low heat for approximately 15–20 minutes, or until the rice is tender but still holds its shape. Stir occasionally to prevent the rice from sticking to the bottom of the pot.
Keep an eye on the consistency of the soup. Rice absorbs quite a bit of liquid as it cooks, so if the soup becomes too thick, add a little hot water or chicken stock to reach your desired consistency. Taste and adjust the seasoning with additional salt and pepper, if needed.Adăugarea orezului
  • Prepare the Sour Cream, Egg Yolk, and Lemon Mixture
In a large mixing bowl, whisk the egg yolks and sour cream until smooth and fully combined, with no lumps remaining.
Gradually stir in the freshly squeezed lemon juice, adjusting the amount to taste. Add a little finely chopped fresh parsley and, if you enjoy its flavor, a small amount of fresh dill. Mix until everything is evenly incorporated.
Set the mixture aside while you prepare to temper it with the hot soup.

  • Gradually ladle some of the hot broth from the pot into the sour cream and egg yolk mixture, whisking continuously as you pour. Repeat this process 2–3 times, until the mixture is warmed through.
This step is essential because it gradually brings the sour cream and egg yolk mixture closer to the temperature of the hot soup, preventing the egg yolks from curdling when added to the pot.Pregătirea liezonului cu smântână, gălbenușuri și lămâie 3Pregătirea liezonului cu smântână, gălbenușuri și lămâie 4
  • Finish the Soup with the Sour Cream and Egg Yolk Mixture
Reduce the heat to the lowest setting or turn it off completely. Slowly pour the tempered sour cream and egg yolk mixture into the pot, stirring continuously to distribute it evenly throughout the soup.
Once the sour cream, egg yolks, lemon juice, and fresh herbs have been added, do not allow the soup to boil again. The residual heat is enough to incorporate the mixture while preserving the soup’s smooth, creamy texture.
Taste and add a little more lemon juice, if desired. The gentle tanginess should balance the richness of the sour cream without overpowering the flavor of the vegetables and chicken.Dregerea ciorbeiCiorbă de pui à la grec servire 1
  • How to Serve Greek-Style Chicken Soup
Serve the Greek-style chicken soup warm, garnished with freshly chopped parsley and accompanied by slices of homemade bread. For those who prefer a tangier flavor, place a few lemon wedges on the table so everyone can add extra lemon juice to taste.
This hearty soup is satisfying enough to serve as a main course for lunch. The combination of tender chicken, flavorful vegetables, and the creamy sour cream and egg yolk mixture makes it a wonderful choice for a comforting family meal.Ciorbă de pui à la grec servire 2Ciorbă de pui à la grec top view
  • How to Store Greek-Style Chicken Soup
Allow the soup to cool slightly, then transfer it to airtight containers and refrigerate. For food safety, refrigerate the soup within 2 hours of cooking and consume it within 2–3 days.
When reheating, use low heat and warm only the amount you plan to serve. Avoid bringing the soup to a boil, as the sour cream and egg yolks in the mixture may affect its smooth, creamy texture.
If possible, reheat individual portions separately, stirring gently and making sure the soup does not come to a boil.Ciorbă de pui à la grec servire 4Ciorbă de pui à la grec servire 5
