Let’s get one thing straight from the start: it’s not that we don’t enjoy cooking. Quite the opposite! For me, cooking is still one of the lovely moments of the day. But between shopping, washing, peeling, chopping, and getting the ingredients ready, quite a bit of time can pass before the actual cooking even begins.

So, I try to get a little organized ahead of time.
I don’t do meal prep in the traditional sense. I don’t cook all the meals for an entire week, and I don’t fill the fridge with dozens of containers. I simply prepare my ingredients.

And a few minutes spent organizing on one day can save me precious time in the days that follow.
I prepare the vegetables based on what I plan to cook. I don’t just put vegetables into bags and then figure out what to do with them later. I try to think ahead about a few dishes I know I make often.

Some vegetables I cut into larger pieces for creamy soups. Others I prepare for soups or stews. I grate zucchini and carrots to use for vegetable fritters, various vegetable dishes, or even cake layers.
The idea is simple: I prepare the ingredients exactly in the form I know I’ll need them later.

    Tomatoes, for example, change texture after freezing, but they can be great in sauces or cooked dishes.
    Zucchini can release quite a bit of water, so I prefer to grate it, squeeze it well, and only then portion it out.
    Lettuce and other delicate leafy greens are generally not the best choice for freezing if you plan to eat them raw later.

  • How I Use the Vacuum Sealer
    For these packs, I use the Heinner vacuum sealer. I like being able to portion the ingredients exactly as needed and organize them more easily in the freezer. Instead of opening a large bag and trying to separate just part of the contents, I simply take out the prepared pack for the recipe I want to make.
    For me, the vacuum sealer is especially useful when I’m preparing several packs at once.

    It’s much more practical to have several smaller portions that you can use exactly when you need them.
    Prepare combinations, not just individual ingredients. Sometimes it’s useful to keep ingredients separate. Other times, having a combination ready for a specific recipe can save you even more time. I prefer to do a bit of both.
