Have you ever made something so delicious that you were incredibly proud of it… by mistake? Well, that’s exactly what happened to me with these magnificent buns. Don’t forget that you can also find the recipe on Chef Adrian Hadean’s blog, where I will post a recipe weekly based on the theme I’ve received. This time, we’re talking about brunch, or rather, a spring brunch! I had a completely different idea for the brunch recipe, but as I went along, ideas just kept piling up in my head. I gave in! And suddenly, I changed the course of things.
I’m always proud of my dishes, but I’m even prouder when I allow myself to be carried away by that wave… of the “taste” that forms in my mind. I’m beyond happy when I manage to bring such a dish to life, and even more so to have the opportunity to share it with you.
Tuna and egg salads, paired with bacon and fried eggs, offer a variety of textures and flavors that complement this brunch perfectly. Together, these dishes are not only nutritious but also easy to serve in an informal setting—ideal for a relaxing moment outdoors or a meal with friends.

Ingredients

  • For the dough:
    400 ml milk

  • 600 g flour

  • 50 g melted butter

  • 20 g fresh yeast

  • 20 g sugar

  • 15 g salt

  • For the filling:
    50 g spinach

  • 2 green onion stalks

  • 2 green garlic stalks

  • ½ bunch dill

  • ½ bunch parsley

  • 80 g softened butter

  • 100 g cheese mix

  • Salt and pepper to taste

  • For the glaze:
    1 egg + 2 tablespoons milk (for greasing the buns)

  • Decoration (optional):
    Mixed seeds

  • Ingredients for egg salad with peas:
    5 whole boiled eggs + 2 egg whites (I made the mayonnaise from 2 yolks)

  • 1 green onion

  • 2-3 red radishes

  • 50 g peas

  • 100 g ham

  • 1 tablespoon Greek yogurt

  • 2-3 tablespoons mayonnaise

  • Salt, pepper, and lemon juice to taste

  • Ingredients for tuna salad with vegetables:
    100 g tuna in its juice

  • 2 avocados

  • 1 red pepper

  • 50 g corn

  • 1 green onion

  • 1 cucumber

  • 1 tablespoon Greek yogurt

  • 2-3 tablespoons mayonnaise

  • Salt, pepper, and lemon juice to taste

Directions

  • Dough preparation method:
    To prepare the dough, I slightly warmed the milk. I mixed the yeast with the sugar and 2-3 tablespoons of the warm milk, then left them aside for about 5 minutes. I sifted the flour into a bowl, sprinkled the salt over it, and then added the yeast mixture and the milk.
  • I kneaded the dough in a food processor for 7-8 minutes, but you can also knead it by hand for 10-15 minutes. I also poured in the melted butter in a thin stream until the dough became smooth. Then, I shaped it into a ball and placed it in a bowl to rise, covering it with cling film and a clean towel. The rising process takes 35-45 minutes, or until the dough doubles in size.
  • Filling preparation method:
    For the bun filling, I chopped all the herbs using a food processor. I seasoned them with salt and freshly ground pepper. Then, I added the melted butter to the mixture and stirred everything well until I obtained a smooth butter cream with herbs. What wonderful flavors…
  • How to portion and shape the bread rolls:
    On a lightly floured work surface, I rolled out the dough as thinly as possible, being careful not to tear it. On one half of the dough, I spread the herb buttercream and sprinkled the cheese mix on top. I then carefully rolled everything up, folding the side with the herbs over the plain side.
  • I divided the dough into 6 approximately equal parts. Each part was then divided into 3 strips, making sure one end remained intact (see photo). I took each strip and twisted it to form spirals, which I then braided together.
  • I continued forming the bread rolls by rolling each strip, starting from the end where I finished braiding and rolling towards the end where I started. I placed the bread rolls on a tray lined with baking paper (I used a large muffin tray). I covered them with foil and let them rise for 40 minutes.
  • Decorating and baking the bread rolls with herbs and cheese:
    I have to admit, they look absolutely delightful even before baking. But a job well done must be completed! I brushed the bread rolls with an egg wash mixed with milk and sprinkled a seed mix on top. I placed the tray in the oven for 35-40 minutes at 180°C. As soon as they were ready, I took them out and placed them on a rack to cool.
  • How to Make Delicious Salads:
    The whole house was filled with the inviting scent of spring! What better way to serve these aromatic bread rolls than with two salads that also carry the essence of spring? Both the egg salad and the tuna salad are perfect for brunch.
  • Preparing them is incredibly easy, and the fact that both salads share the same dressing (lemon, mayonnaise, yogurt) makes their preparation even simpler.
  • For an Even Tastier Brunch…
    For me personally, a brunch cannot exist without bacon and soft-boiled eggs. In addition to the salads mentioned above, I, of course, prepared crispy bacon and eggs. A slice of bread roll spread with cream cheese, a few slices of avocado, and a soft-boiled egg on top… sounds like heaven to me!
  • Serving Spring Bread Rolls with a Delicious Twist:
    I placed all the elements of my brunch in the center of the table. I can’t even describe how wonderful it smells in the kitchen: fresh herbs, baked dough, bacon, and eggs – simply delicious!
  • I sliced the bread rolls as they were eaten, and everyone served themselves with whatever they wanted. Ah! And how could I forget the coffee or tea! So, a complete brunch in many ways.
  • The completely cooled bread rolls slice beautifully, and you can easily get 4-5 slices. Let me share a little secret with you: these bread rolls are phenomenal just the way they are – fluffy and full of flavor. They keep very well when individually wrapped and stored in a cool place.
