Delicious creamy chicken pie

A delicious version for all meat pie lovers. You have here my version of a creamy and appetizing chicken and bacon pie.

I never liked meat pies, of any kind, regardless of what ingredients they contained. However, I decided to make my own recipe, with carefully chosen ingredients. I can say that the final result made me very proud of myself and reminded me once again why I love cooking. Now, unfortunately I know that I don’t have many pictures, but I will detail it as much as possible so that it will be easy for you to reproduce it.

Ingredients

  • 1 package of pie sheets

  • 500 ml cooking cream

  • 6 large eggs

  • 750 g chopped chicken breast

  • 3 medium-sized red onions

  • 200 g sour cream 30% fat

  • 150 g fried and chopped bacon

  • 50 g butter + 30 g butter for greasing the pan

  • 100 ml olive oil

  • 100 g finely grated parmesan

  • 200 g mix of cheeses

  • 30 g of corn starch dissolved in 60 ml of milk

  • salt pepper


  • For the top crust
    2 eggs

  • 50 g parmesan

  • 50 g mix of cheeses

  • 50 ml cooking cream

  • salt pepper

Directions

  • First, I fried the bacon, then I let it cool down and chopped it into small pieces. I kept 2-3 tablespoons of the remaining fat from the bacon in the pan, added butter and chopped onion. I cooked it until it softened, then I added the pieces of chicken breast, seasoned to taste and cooked until the chicken takes on a slightly brown color. Check a thick piece to make sure it is cooked well.
  • Choose a bowl large enough to combine all the ingredients to prepare the pie filling. Break the eggs and mix them vigorously. Add sour cream, cooking cream, cheese mix, parmesan and cornstarch dissolved in milk. Put the bowl aside and add the chicken breast and onion to the bowl of a food processor. You don’t have to chop very hard, but neither should there be very large pieces of chicken. Add this mix to the bowl with the eggs and the rest of the ingredients, the chopped bacon and mix well. Taste and season with salt and pepper if necessary. I chose a pan with high walls, big enough so that the puff pastry sheets fit almost perfectly on the bottom of the pan. Grease the pan with butter and place 2 sheets of puff pastry, then grease them with olive oil.
  • Add a few spoonfuls of the chicken mixture, spread them over the sheets, then put two more sheets of puff pastry on top. Continue until you finish the mix with chicken and puff pastry, the last row must remain puff pastry. Don’t forget to grease the sheets with oil every time you add them.
  • In a smaller bowl this time, break 2 eggs, give them a good mix, add cooking cream, salt and pepper. Pour this mixture into the pan with the pie and spread well over the entire surface.
  • Scatter over the eggs, a mixture of cheeses of your choice.
  • Bake the pie at 180 degrees for an hour, then reduce the heat to 150 degrees for another 10-15 minutes, the top will have a beautiful yellow-brown color. I forgot to mention that I also used baking paper, to be more secure. It is your choice if you use it or not.
  • As a little tip, this pie is absolutely delicious both hot and slightly warm, but it is not as tasty cold. You can reheat it, but the crispy layer on top will soften.
