Semolina porridge with milk is one of those classic desserts that never fades from memory. For me, it’s closely tied to childhood, simple homemade meals, and the comforting feeling that the best desserts didn’t need fancy ingredients to be truly special.

I love keeping the traditional flavor I grew up with, but every now and then I like to give it a little upgrade. This version is extra creamy thanks to the addition of heavy cream and butter, and I like to serve it with sour cherry jam and a sprinkle of white chocolate. The combination of silky semolina pudding and sweet-tart cherry preserves turns this humble dessert into something elegant enough to serve to guests while still keeping all the comfort of the original recipe.

Ingredients

  • 500 ml whole milk

  • 150 ml heavy cream (30–35% fat), unsweetened

  • 55 g semolina

  • 30 g sugar

  • 1 tsp vanilla extract

  • 1 pinch of salt

  • 20 g butter

  • For serving
  • 4–5 tbsp sour cherry jam with lime and white chocolate (or any jam of your choice)

  • Finely grated lime zest

  • A few white chocolate shavings

  • The heavy cream gives the semolina a richer, silkier texture, while the jam can easily be replaced with your favorite flavor.   • In a saucepan, combine the milk, heavy cream, sugar, vanilla extract, and a pinch of salt. Heat the mixture over medium heat until it’s just about to come to a boil.

  • Reduce the heat to low and cook for 4–5 minutes, stirring constantly, until the semolina becomes thick and creamy. Remove the saucepan from the heat and stir in the butter until it has completely melted, giving the dessert a smooth, velvety texture.
