Breakfast is always a challenge, you have to eat something tasty and filling to start the day strong. This omelet in the oven is an ideal solution, it prepares quickly and is more than enough for 2 people. You can also take it in the package for work or why not put it in the package for school.

Ingredients

  • 200 g cottage cheese

  • 1 flatbread

  • 100 g baby spinach

  • 30 g chopped red bell pepper ( or tomatoes)

  • 50 g chopped sausages (or bacon)

  • 45 g finely grated parmesan

  • 4 eggs

  • 30 g finely grated smoked cheese

  • salt and pepper to taste

Directions

  • This combination of cottage cheese and eggs quickly went viral. the most beautiful part is that you can use any ingredients you want in the omelet, as I did, or you can just make it simple, without vegetables, cheeses, etc.
  • In a bowl, mix the eggs well. Season with salt and pepper, add cottage cheese, finely chopped pepper and Parmesan. Place 1 flatbread in a round pan with a removable bottom, lined with baking paper. If you don’t have such a tray, you can use a pot. Add half of the egg mixture on top of the flatbread.
  • its time to add in your greens, and the spinach goes very well in this baked omelet. Over the spinach sprinkle the chopped sausages or bacon, or even strips of ham, it’s up to you. Pour over the rest of the composition remaining from the egg and cottage cheese mixture. Sprinkle the grated cheese on top and place the pan in the oven for 15-20 minutes at 200 degrees.
  • Voila! We have a baked omelette, absolutely delicious. You can serve it with simple cut vegetables or with a seasonal salad. Cut the omelet just like a pizza and enjoy your breakfast, both tasty and healthy.
