We all remember the sweets from our childhood. Cookies were definitely prepared most often because they obtained a rather large amount from a single dough. The best and funniest part is that we could model different shapes and we, the children, could also participate. My favorites were the jam and walnut cookies, absolutely delicious. For this recipe, I prepared 2 portions of dough, one with larger chopped walnuts and one with finely chopped walnuts. Both came out equally tender, but the one with finely chopped walnut is much easier to shape.

Ingredients

  • 550 g of flour

  • 2 eggs

  • 200 g ground walnut

  • 180 g butter min 82% – soft, at room temperature

  • 180 g lard at room temperature

  • 200 g powdered sugar

  • a pinch of salt

  • 1 teaspoon vanilla sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon yeast

  • 1 tablespoon worm milk


  • Additional:

    powdered sugar

  • plum jam (or any jam you prefer that is not too juicy)

  • walnuts

  • melted chocolate

  • finely grated coconut

Directions

  • This dough is so simple to make, and its use is countless. You can make decorated cookies for the holidays, using different glazes and fillings. You can also prepare different cute cookies for the children’s lunch pack, or you can cut them using different shapes and enjoy them with tea or coffee.
  • I put all the flour directly in the bowl of the food processor. With the help of a spoon, I made a well in which I added yeast, sugar, 1 tablespoon of warm milk and covered everything with a little flour. I let the yeast activate for 10 minutes.
  • After the 10 minutes, add the rest of the ingredients: eggs, ground walnuts, powdered sugar, salt, flavors, butter and lard. If you wish, you can also add the zest of a grated lemon or orange.
  • Mix the dough well for 5 minutes. Place food foil on the work table and remove the formed dough from the bowl of the food processor onto it. Pack everything well and put the dough in the refrigerator for 5-6 hours or preferably overnight. Take the dough out of the refrigerator 10 minutes before making the cookies. The butter will soften a little more and we will be able to work with it more easily. Divide the dough in half to make it easier to work. Place half on a lightly floured table, and wrap half in foil, and put back in the fridge.
  • It’s time to let your imagination run free. you can make all kinds of cookies, in different shapes. I chose to make small cones and bags filled with plum jam, but I also cut the dough using different shapes.
  • I baked the cookies one at a time at 180 degrees for 12-15 minutes. They should brown slightly, not get a dark brown color. You will see in the pictures that I forgot one of the trays, unfortunately. So don’t do the same as me. The cookies you want with sugar must be powdered while they are still hot. These cookies can be kept for 7-10 days, in hermetically sealed metal boxes. Enjoy!
