Ingredients
300 g canned (or frozen) peas
300 g smoked sausages
100 g carrots
150 g of red pepper
2 green onions
100 g leeks
1 large potato (200 g)
150 g canned red beans
250 ml homemade tomato sauce
30 ml of oil
salt and freshly ground pepper to taste
dill and parsley for garnish
Directions
- When it comes to stews like this one, I’m always happy that many of the ingredients are preserved from the end of summer. It’s a wonderful opportunity to make the most of them and prepare dishes that are close to my heart. As for the preparation, it didn’t take much — I simply chopped the fresh ingredients.
- In a non-stick pan, I added the oil and sausages, sautéing them quickly over medium heat for 5-6 minutes. After that, I removed them onto a plate. The sausages infused the oil with their flavor, which will also enrich the stew. You can replace the sausages with bacon, smoked ribs, or chicken if you prefer. In the same oil, I added the chopped vegetables — peppers, green onions, leeks, and carrots — and sautéed them for 6-8 minutes.
- Once the vegetables had softened slightly, I added the potatoes. I poured in enough water to cover them and placed a lid on the pan to ensure everything cooked evenly. Depending on the type of potatoes used, the cooking time may vary, so I can’t provide an exact time. Cook over medium heat, stirring occasionally, until the potatoes are fully cooked.
- Once the potatoes were cooked, I added the peas, red beans, and the sausages I had previously fried. I also added salt, pepper, and the delicious homemade tomato sauce, which has a wonderful bright red color. The sauce will give the stew a gorgeous color and a summery flavor. I let everything simmer on low heat until the sauce thickened. In the end, I garnished it with dill and parsley, which I had frozen since summer.
- And how could I serve this stew without some fresh homemade bread? It was the perfect opportunity to prepare no-knead bread once again, a recipe ideal for beginners. I made a large loaf using 1 kg of flour.
- The pea stew with vegetables, smoked sausages, and fiery red tomato sauce is absolutely delicious just as it is. I soaked it with fresh bread in the aromatic sauce and enjoyed it with great pleasure. If you wish, you can also add sour cream or full-fat yogurt when serving.
