minutesZucchini is probably one of the vegetables I cook with most often during the summer. It’s incredibly versatile, has a mild, delicate flavor, and can be turned into all kinds of dishes—from fritters and gratins to soups and creamy purées.
This time, I chose one of the simplest versions: a smooth, velvety zucchini soup enriched with Parmesan and Cheddar, then topped with crispy bacon and pumpkin seeds. I love the contrast between the creamy texture and the crunchy toppings. The result is a soup that’s made with everyday ingredients yet has a rich, satisfying flavor.
Ingredients

700 g (1½ lb) zucchini
1 large onion
1 small carrot
2 potatoes (150–180 g / 5–6 oz)
2–3 garlic cloves
1 tbsp vegetable oil
20 g (1½ tbsp) butter
800 ml (3⅓ cups) vegetable or chicken stock
150 ml (⅔ cup) cooking cream (heavy cream)
40 g (½ cup) grated Parmesan cheese
40 g (½ cup) grated Cheddar cheese
Salt and freshly ground black pepper, to taste
150 g (5 oz) smoked bacon
Toasted pumpkin seeds, for serving (optional)
Preparation method
- Wash the zucchini thoroughly and cut it into slices or bite-sized chunks. If you’re using young, tender zucchini, there’s no need to peel them. Peel the onion, carrot, potatoes, and garlic, then cut them into roughly equal-sized pieces.
Start by preparing the topping. Heat the oil in a skillet over medium heat, add the bacon, and cook until crispy. Transfer the bacon to a paper towel-lined plate to drain any excess fat, then set it aside until ready to serve.

- Using the same skillet, add the onion and carrot and cook for a few minutes, until the onion becomes translucent and the carrot begins to soften. Add the zucchini, potatoes, and garlic, stir gently, and continue cooking for another 3–4 minutes to allow the flavors to develop. If you have a piece of Parmesan rind, add it to the pot for an extra depth of flavor.


- Pour the hot stock over the vegetables and simmer for about 20 minutes, or until they are very tender. Remove the pot from the heat and let the vegetables cool slightly, then blend everything until the soup is smooth and velvety.


- Stir in the cooking cream, grated Cheddar, and Parmesan until the cheese has melted. Return the pot to low heat for 2–3 minutes, making sure the soup doesn’t come to a boil. Season with salt and black pepper to taste. If needed, add a little more hot stock until you reach your desired consistency.


- Serve the soup hot, topped with crispy bacon, golden croutons, freshly grated Parmesan, and a sprinkle of fresh herbs. For an extra bit of crunch, garnish with a handful of lightly toasted pumpkin seeds.
