Autumn definitely deserves an elegant dessert, and I think it would look something like this: golden éclair shells, slightly crisp on the outside and airy on the inside, filled with a smooth pumpkin and mascarpone cream flavored with cinnamon, vanilla, and orange. And on top, a delicate drizzle of salted caramel and a crunchy mix of walnuts, almonds, and hazelnuts.

This is the kind of dessert that looks spectacular but isn’t nearly as complicated to make as it might seem. The éclair shells are made from classic choux pastry, the filling is smooth and wonderfully fragrant, and the salted caramel adds just the right contrast to the sweetness of the pumpkin.

I wanted every element to have its own place. The shells are lightly crisp and airy, the cream is velvety and aromatic, and the caramel and nuts on top bring both sweetness and texture.

I decided to make the éclairs smaller, about 8–10 cm (3–4 inches) long, because I think they’re perfect for an autumn dessert served at a festive gathering, alongside a cup of coffee or tea. And since they’re small, they’re just the right size for a little indulgence.

The result is a delicate dessert with plenty of character—festive and elegant without being overly fussy.
And if you ask me, the best part is the combination of the pumpkin cream and the salted caramel drizzled on top.

Ingredients

  • For the Éclair Shells
  • 112 ml milk

  • 112 ml water

  • 90 g butter, at least 80% fat

  • 1 teaspoon ground cinnamon + 1 teaspoon ground ginger

  • A generous pinch of salt

  • 180 g all-purpose flour

  • 225 g eggs, without shells (about 4 large eggs), beaten and added gradually

  • For the Pumpkin and Mascarpone Cream
  • 300 g mascarpone, chilled

  • 200 g roasted pumpkin purée, well drained

  • 200 ml heavy cream, chilled

  • 55 g powdered sugar

  • 1 teaspoon vanilla extract

  • ½ teaspoon ground cinnamon

  • Finely grated zest of ½ an orange

  • A tiny pinch of salt

  • For Decorating
  • Salted caramel, prepared in advance

  • About 60 g walnuts, almonds, and hazelnuts, toasted and chopped

Preparation method

    When making choux pastry, the amount of egg shouldn’t be treated as a fixed quantity that must be used down to the last gram. Add the eggs gradually and let the consistency of the dough guide you. It should be glossy and soft, falling from the spatula in a thick V shape.
    Don’t rush the baking process or open the oven door too early. The éclair shells need time to rise and then dry out sufficiently. If you remove them too soon, they may collapse.
    The pumpkin purée must be well drained. This is one of the most important details for achieving a firm cream that’s easy to pipe.

  • Preparing the Éclair Shells
    Place the water, milk, butter, and salt in a saucepan. Heat over medium heat until the butter has melted completely and the liquid comes to a boil.

  • You may not need to use all the eggs. Stop adding them once the dough becomes glossy and soft, falling from the spatula in a thick V shape.   • Baking the Éclair Shells
    Bake the éclairs in a preheated oven at 180°C (350°F), using conventional top and bottom heat, for about 15 minutes. Then reduce the temperature to 165–170°C (330–340°F) and continue baking for another 15–20 minutes.
    Do not open the oven door during the first 20–25 minutes. The shells should be a deep golden color and firm on the outside, not just lightly browned. If they aren’t baked thoroughly enough, they may collapse as they cool.

  • Transfer the pumpkin and mascarpone cream to a piping bag and pipe a generous amount onto the base of each éclair. Place the top shell over the filling and press down very gently to help the cream settle evenly.

  • Finishing the Éclairs
    Gently warm the prepared salted caramel until it becomes fluid enough to drizzle.
    Drizzle a thin line of caramel over each éclair, then immediately sprinkle with the toasted, chopped walnuts, almonds, and hazelnuts.
    To finish, you can add a light dusting of cinnamon and, if you enjoy the sweet-and-salty contrast, a few fine flakes of sea salt.
