minutesWe all have those days when we feel lazy and don’t feel like cooking. However, we can’t postpone hunger for too long, and if we still have to cook, let’s make something as quick and delicious as possible. My latest culinary ‘addiction’ has been these boiled and mashed potatoes. I love baking them in the oven, adding a generous handful of cheese at the end. To make this lunch even more special, alongside the juicy baked chicken, I also prepared a sauce that pairs perfectly with both, along with a seasonal salad. Let me show you how simple it is to prepare!
Ingredients
For potatoes and chicken:
800 g boiled white potatoes700 g of boneless chicken legs
30 g of butter
30 ml of oil
150 g cheese
garlic (to taste, fresh or dry)
salt, smoked paprika and pepper to taste
dried rosemary (to taste)
For the dipping sauce:
150 g Greek yogurt150 g homemade mayonnaise
100 ml sweet ketchup
2-3 cloves of green garlic or a few cloves of dried garlic
salt, pepper to taste
Spring salad (Optional):
green salad, green onion, radish, dill, salt, pepper, oil, vinegar.
Directions
- How great it is when you don’t need sophisticated ingredients to prepare a delicious lunch for the whole family. I don’t know about you, but I, for one, am very happy that I don’t have to overthink things. You can use any kind of meat you prefer, or even swap the dip for something different. Feel free to replace the salad with whatever you like!
- I placed baking paper in a large oven tray and arranged the boiled potatoes on it. One by one, I crushed them using a glass. In a saucepan, I added butter, oil, spices, and garlic flakes. I heated the mixture until the butter melted. Using a brush, I greased the potatoes generously, making sure to cover them more than halfway, as I will grease them again towards the end.
- You can season the chicken to your liking. I chose to season it with spices similar to those used for the potatoes. I let the seasoned meat sit on the kitchen counter for 10-15 minutes, and then I placed it in the pan with the potatoes.
- I placed the tray in the preheated oven at 180 degrees for 15-20 minutes. After this time, I took the tray out and greased the potatoes again with the remaining butter and garlic mixture. I also added grated smoked cheese on top. This is one of my favorites, but you can use whatever cheese you prefer. I also sprinkled a little on the chicken, though that’s optional. I returned the pan to the oven for another 10 minutes, or until the chicken was fully cooked.
- In the last few minutes while the tray was in the oven, I prepared the rest of the accompaniments to complete the perfect lunch. You can add freshly chopped dill, pickled cucumbers, and even onions to the dipping sauce. This time, I chose to keep it simpler, with just a subtle hint of green garlic. I also prepared the salad now!
- Ahhh! The smell in the whole house is amazing! A lunch I prepared with almost no effort. I chose to cut the chicken into bite-sized pieces just because that’s what I wanted, it’s not a rule!
