minutesSome recipes are so simple that you almost forget how good they are until you make them again. That’s exactly what happened to me with these rustic potatoes.
Honestly, I can’t even remember the last time I made or ate them, but the moment the onions and sausages started sizzling in the pan, the kitchen was instantly filled with that smell that takes you straight back to simple, comforting homemade meals.
Rustic potatoes don’t need fancy ingredients or complicated techniques. Their charm lies in that simple combination of potatoes, onions, a bit of smoked meat, and lots of flavor.
For this recipe, I used the Nicolai Tand – Origini cast aluminum frying pan, Cooking by Heinner, which cooks evenly and retains heat very well — something especially important for dishes that need a nice golden crust without burning.
It’s the kind of meal you prepare quickly, but it disappears just as fast from the plate.
Ingredients
4 boiled potatoes, diced
250 g sausages, sliced
3 onions, thinly sliced
3–4 green onions, chopped
1/2 red bell pepper, sliced
3–4 garlic cloves
fresh herbs
oil, sweet paprika, salt and pepper
cheese for serving (optional)
Preparation method:
- The ingredients for this recipe are not only affordable but can also be replaced as you like — the important thing is to keep the key ingredients: potatoes and onions.

- To start, we heat a little oil in the pan and brown the sausages until they become slightly crispy and release their aroma. Once they are ready, we remove them and set them aside on a plate.

- In the same pan, we add the onions and bell pepper and cook them over medium heat until they soften and start to lightly caramelize. We do the same as with the sausages and set the vegetables aside for the moment.


- Now it’s time for the potatoes. We lightly brown them, adding a bit more oil if needed, and season with salt, pepper, and sweet paprika. We gently mix to avoid breaking the potatoes and continue cooking until they develop a beautiful golden crust on the outside.


- We then add the garlic, sausages, onions, and bell pepper, gently combine everything, and let it cook for about one minute so the flavors can release.
We sprinkle the cheese (optional), cover with a lid, and cook on low heat for about 2–3 minutes, or until the cheese melts.

- Finally, we add the freshly chopped green onions or herbs. The rustic potatoes are served warm, plain or with a bit of crumbled cheese on top. They are perfect both as a main dish or as a side dish alongside other meals. Enjoy!
