Smash the cookie – A fun, quick and easy dessert to make when you’re craving something sweet but don’t have much time to prepare. Follow the recipe and you will see that our dessert has a sweet and sour surprise in the middle.

You know those moments when you really want something sweet, but you’re too tired or you just don’t feel like spending hours in the kitchen? Been there, done that! So, I remembered some quick and funny desserts. I decided to create a “smash the cookie dessert” just because I had the necessary ingredients lying around the kitchen. Let’s get down to business!

Ingredients

  • 300 g of plain vanilla cream

  • 60 g coconut flakes

  • 2 packets of digestive biscuits (or 12-16 round digestive biscuits)

  • 1 jar of berry jam (or any other favorite jam)

  • 2-3 pieces of peach from the compote

Directions

  • We always have leftovers when we cook, especially when we prepare a dessert. We then struggle for about 2 days to hide small containers in the refrigerator that eventually end up in the trash. Well, I had some vanilla cream left over from another dessert and in order not to waste it, I decided to turn it into something quick and delicious.
  • To “spice up” things a little, I decided to add coconut flakes to the cream, slightly changing its texture and taste. I used a hand mixer and mixed everything well. If you want two different textures, keep a few tablespoons of cream in the bowl before adding the coconut flakes. We transfer the cream into a piping bag and prepare to assemble the dessert.
  • We open the biscuits from the package and arrange them separately from each other on the work table. With the help of the pastry bag, form circles of cream on the biscuits, leaving a small hole in the middle. For each biscuit with cream, make sure to keep another biscuit that we put on top. Fill the holes with half a teaspoon of berry jam, only then put the other biscuit on top.
  • Time to decorate!! If you stopped the cream before adding the coconut flakes, now is the time to use it, if you don’t continue to use the cream from the piping bag. Form a nice spiral from the cream, add a slice of peach and a small piece of biscuit. It’s just an idea, you can decorate as you wish, the important thing is to have fun making this dessert.
  • And because I started with the idea that this cake wouldn’t last until the morning, I obviously thought of a “smash the cake” thing. So, grab a spoon and hit the cake, break it into pieces and enjoy it! If you still prefer a softer biscuit, leave the cake in the fridge until the next day. For a cake made from leftovers in just 15 minutes, it was absolutely delicious, it disappeared immediately after the plates and everyone had fun smashing the cake to eat it.
