minutesI admit, classic mashed potatoes are good… but sometimes I crave something a little different, without complicating things. Side dishes tend to be quite common – we all know them and prepare them depending on what we serve as the main course.
If roasted vegetables, plain rice, or the usual mashed potatoes no longer excite you, or you simply want something different, I invite you to check out this recipe. It’s a lightly flavored mash with a beautiful mix of colors – yellow and green – that makes it even more appetizing.
This is the kind of side dish that pairs perfectly with a roast, fish, or even a vegetarian meal, giving a small upgrade to your everyday table without any effort. Plus, any leftovers can be easily reused in other recipes, helping reduce food waste – for example, in a leftover breakfast pie.
Ingredients
1 kg potatoes
80–100 g cheese mix (cheddar, mozzarella, emmental)
80 g frozen spinach (leaves, not puréed)
40 g butter
80–120 ml warm milk
Salt and freshly ground black pepper, to taste
½ teaspoon garlic powder (optional, but recommended)
Preparation method
- Creator’s tip:
The type of cheese can be adjusted (stronger or milder), and the spinach can be replaced with kale or wild garlic when in season.

- The potatoes are peeled, cut into even cubes, and boiled in salted water until very tender. After boiling, they are well drained and mashed while still hot to achieve a smooth, creamy texture.

- The frozen spinach is thawed beforehand and then squeezed well to remove any excess water. If the leaves are large, they can be roughly chopped. The butter is added to the mashed potatoes and stirred until fully melted and incorporated.
Next, the cheese mix, spinach, and garlic powder are added, followed by the warm milk, poured gradually until the mash reaches the desired consistency. Season with salt and pepper, then stir vigorously to achieve a creamy, smooth, and slightly airy texture.

- The mashed potatoes with spinach and cheese mix are served hot as a side dish alongside roasts, fish, or vegetarian dishes. They are just as good on their own, perhaps with a poached egg or a few vegetables quickly sautéed in a pan. Any leftovers can be stored in the fridge and reused in other recipes, such as a savory pie or a hearty breakfast, making it a practical and delicious way to reduce food waste.
