I love savory loaf cakes – they’re always a good idea. But often, a full-sized one made with 6–8 eggs is just too much unless you’re feeding a crowd. That’s why I chose a smaller version, perfect for 3–4 people.
I baked it in a square tray – why not? Who says it must always be loaf-shaped? We make savory muffins, right? So I say anything goes – even round would have worked. What matters is reaching the goal: something delicious and satisfying.
I feel like these savory cakes were born from a home cook’s desire to reduce food waste, using up whatever leftovers, cold cuts, or veggies were around.
Let me show you just how easy and flavorful these fluffy bites can be. Too bad I can’t send the smell through the screen!
Ingredients (for a small 20×20 cm tray – around 4–5 servings)
4 eggs
150 g bacon
100 g red bell pepper (about half a pepper)
140 g cream cheese
120 g grated cheese (like cheddar or gouda) + 30 g extra for the crust
2–3 stalks green onion
80 ml oil
250 ml sparkling water (or milk)
300-350 g flour
7 g baking powder
Salt and pepper, to taste
Fresh parsley
and your favorite sauce for serving
Preparation:
- As you can see, the ingredients are neither too many nor too few, but they’re incredibly versatile. You can replace the bacon with any type of meat you prefer, or add corn, olives, spinach – be bold and creative!
- I started with the bacon – I used pre-diced bacon, so I simply sautéed it until golden and crispy. Then I set it aside to cool completely while I made the batter.
- In a large bowl, I whisked the 4 eggs lightly. I added the cream cheese and ¾ of the grated cheese, stirring to combine. Then came the oil, sparkling water, sifted flour, baking powder, and seasoning.
- To the batter, I added the chopped red pepper, green onion, parsley, and the cooked bacon (reserving a few crispy bits to sprinkle on top).
- I poured the mixture into a small tray lined with parchment paper. I topped it with the remaining 30 g of cheese and the extra bacon, then baked it in a preheated oven at 180°C (350°F) for 35–40 minutes, or until golden and it passes the toothpick test.
- It was hard to wait for it to cool – the aroma in the kitchen was unbelievable: fresh bread, a hint of pizza, something cheesy and comforting all at once.
- Once cooled a little, I cut it into cubes and garnish with fresh parsley.
You can serve it with any dip you like – garlic yogurt sauce, ketchup, sour cream with herbs… whatever makes you happy! - I truly hope this simple yet delicious recipe will inspire you. I enjoyed every step – from mixing the ingredients to the mouthwatering smell in the kitchen, and finally slicing those first fluffy cubes.
