minutesI always liked to enjoy a good cake when I drink my tea or coffee. Although “five o’clock” type cakes are traditional for the English when they serve their tea, slowly it started to be implemented here as well, whether it’s coffee instead of tea. We often talk about fruit cakes, without cream, which you can cut into small pieces, we are still talking about a snack with tea, we don’t eat to fill up before dinner. My apple cake is aromatic and not very sweet, so it is ideal for a snack with tea, coffee or even for the packed lunch.
Ingredients
200 g Greek yogurt
150 g of sugar
200 -250 g flour
100 ml of oil
3 large chicken eggs
500-600 g apples (peeled and cored)
1 teaspoon cinnamon
1 teaspoon ginger powder
1 teaspoon of baking powder
1 teaspoon of vanilla essence
a pinch of salt
50 g butter (for decorating on top)
1 tablespoon brown sugar (for sprinkling on top)
Directions
- In a bowl, mix whole eggs with sugar until we get a light foam and the sugar is melted. Gradually add the oil, then the spices and finally the yogurt. Mix everything well with a mixer. If you wish, you can also add lemon or orange peel.
- We mix the flour with the baking powder and sift it over the composition in the bowl. With the help of a spatula, we begin to incorporate the flour, making broad and light movements. At the end, we get a composition that flows easily when we pour it into the pan.
- I chose to make this cake in a rectangular pan, but you can use whatever shape you want. Do not forget to add baking paper to the tray. Add a few spoonfuls of dough and spread it well on the bottom of the pan. Place a layer of apples on top of the dough and press them lightly into the dough.
- We continue to form the layers until we finish the dough, taking into account that the last layer is dough. Cut a large apple (or 2-3 suitable apples) into thin slices and start placing them on top of the dough, gently pushing them into it.
- Add strips of butter over the apple slices and finally sprinkle brown sugar mixed with cinnamon (optional) all over the surface. Bake the cake at 180 degrees for 40-45 minutes.
- Even if your patience will be tested, you must let the check cool down completely before cutting it. It is such a simple but very aromatic cake. I heartily advise you to make a double portion in case you want to eat more than one slice, you will not regret it.
