It’s a funny thing how I came up with the idea of ​​this dish and when I think that it all started from a withered hand of spinach, it makes me smile. I never liked the waste of ingredients, I can’t stand the thought of throwing away vegetables, fruits or any product left over from other recipes. So I always try to prepare something delicious with them, no matter how simple the recipe is. That’s how I started preparing these delicious rolls with spinach and cheese, because I had a handful of fresh spinach in the fridge that had actually started to wilt and I didn’t want to lose it. It is a quick and easy recipe in which you can also involve the little ones.

Ingredients


  • 60g baby spinach

  • 100g goat cheese

  • 50g of smoked cheese

  • 50g cream cheese

  • 50g parmesan

  • 275g puff pastry fresh dough

  • 1 teaspoon chopped dill

  • 1 egg

  • seed mix for decoration

  • salt and pepper to taste

Directions

  • Wash the spinach with cold water, drain it well and chop it finely. In a bowl, add the cream cheese and grate the other types of cheese, except Parmesan. Of course, you can use any type of cheese you want, as long as they melt while cooking. Add the chopped spinach, dill, salt (only if you know that the cheeses are not very salty) and freshly ground pepper. Lightly mix all the filling with a fork and set aside. Carefully unfold the puff pastry from the package on the work table, leave it like that on the paper in which it is wrapped.
  • With the help of a spoon, add the mixture of cheeses and spinach and spread it over the entire surface of the dough. We start to roll the dough, the opposite of how it was packed to get a huge and long roll and not a big log of filled dough, because it would look unaesthetic and useless if we don’t want to get gigantic rolls that are hard to eat. To roll more easily, we use the paper in which the dough was wrapped, that’s why we keep it from the very beginning, and as a small tip, we make less mess, in conclusion we have less to clean.
  • With the help of a well-sharpened knife, we begin to cut the dough into 2-3 cm thick pieces. We clean the knife with a kitchen paper towel after using it 2 times, to avoid sticking the dough to the blade of the knife. In an oven tray lined with baking paper, place the spinach and cheese rolls with the filling on top. So on top we will see cute spirals of dough filled with cheeses and greens.
  • In a small bowl, break the egg and mix it with a fork. We can add a pinch of salt and 2 tablespoons of milk, but it is not a rule. I did not add this time, I preferred to leave them simpler. Brush the rolls with beaten egg, trying to cover as much of the surface as possible with dough (the side without the filling, from the outside). Sprinkle a mix of seeds on top, or use whatever seeds you want and finely grated parmesan.
  • We put the tray in the preheated oven at 200g for 15-20 minutes, or until the rolls have a wonderful golden brown color. It also depends on each person’s oven, but in general, use the instructions on the puff pastry packages. The smell from the kitchen is divine, the aroma of the cheeses is as always incomparable from any point of view, or maybe it is just because I love cheese even more than chocolate. All right, take the tray out of the oven and serve the rolls while they are nice and hot. They are quite good even cold, but I prefer them hot. Enjoy!
