A smooth, creamy, and fragrant ice cream with an intense melon flavor and exactly the kind of summer feel you want on a hot day.
I love this recipe because it’s incredibly simple, and the ice cream maker does most of the work. Frozen melon provides the intensely flavorful base, sweetened condensed milk adds sweetness and creaminess, while Greek yogurt brings a fresh tang that balances the dessert beautifully.
One little detail I think is important is to taste the mixture before adding it to the ice cream maker. Melons can vary quite a lot in sweetness, so this is the perfect opportunity to adjust the amount of condensed milk or lemon juice to your taste.

Ingredients

  • For approximately 800–900 ml of ice cream
  • 500 g frozen melon, cut into cubes

  • 200 g sweetened condensed milk

  • 150 ml heavy cream, 30–35% fat

  • 100 g cold Greek yogurt

  • 1 teaspoon vanilla extract

  • 1–2 tablespoons lemon juice

  • a small pinch of salt

    Choose a ripe, fragrant melon. It’s the main ingredient, and its flavor will come through the most in the finished ice cream.
    Don’t let the frozen melon thaw completely before blending. It only needs to soften slightly, just enough to be processed without putting too much strain on the blender.
    Don’t overdo the lemon juice. Its purpose is to balance the sweetness and enhance the melon’s flavor, not overpower it.
    Always taste the mixture before freezing. The amount of sweetened condensed milk can easily be adjusted depending on how sweet the melon is.

  • Preparing the Melon
    For this recipe, it’s important to use a ripe, fragrant melon. Cut the melon into cubes and freeze it in advance.
    Take the melon out of the freezer and let it sit at room temperature for about 5–10 minutes, just until it softens slightly and can be blended more easily. Don’t let it thaw completely.

  • Add the sweetened condensed milk, heavy cream, Greek yogurt, vanilla extract, lemon juice, and a very small pinch of salt.

  • Taste the mixture before adding it to the ice cream maker. If the melon isn’t sweet enough, you can add a little more sweetened condensed milk.
    If you want a fresher, more balanced flavor, you can also add a few more drops of lemon juice.
