hourPumpkin is one of autumn’s star ingredients, loved for its delicate flavor, velvety texture, and versatility in the kitchen. From pies and cakes to side dishes and savory meals, there are countless ways to enjoy it, and creamy pumpkin soup is one of the most comforting.
Although pumpkin has been used in cuisines around the world for centuries, creamy pumpkin soup has become a favorite for its simplicity and versatility. You can pair pumpkin with other vegetables, spices, and creamy ingredients to create different flavors and textures every time.
For this version, I’ve combined roasted pumpkin with chicken breast, vegetables, heavy cream, and Parmesan to create a hearty, flavorful soup with a wonderfully creamy texture. It’s perfect for autumn and winter, when we’re craving warm, nourishing meals that are easy to incorporate into the family menu.
Ingredients
1.2–1.5 kg peeled pumpkin
600–700 g chicken breast
2 leeks
3 carrots
3 medium potatoes
2 large tomatoes
1 medium zucchini
5–6 garlic cloves
200 ml heavy cream
80–100 g grated Parmesan
2–3 tablespoons olive oil
2–2,5 liters chicken stock or water, depending on your preferred consistency
Salt and pepper, to taste
Thyme, sweet paprika, oregano, and basil, to taste
Preparation method
- Tips for the Perfect Creamy Pumpkin Soup
For a deeper flavor, roast the pumpkin together with the carrots, tomatoes, and garlic. Roasting helps develop the flavors and gives the soup a richer taste than simply boiling the vegetables.
Keep the chicken breast in strips or bite-sized pieces rather than blending it with the vegetables. This gives you a smooth, creamy soup with a more satisfying texture when served.
If the pumpkin is particularly sweet, balance its flavor with the tomatoes, black pepper, and a little thyme. For an extra layer of flavor and texture, sprinkle some toasted pumpkin seeds over the soup just before serving.
- Roast the Vegetables
First, preheat the oven to 200°C (400°F). Peel and deseed the pumpkin, then cut it into manageable chunks. Peel the carrots and cut them into smaller pieces. Cut the tomatoes and zucchini into chunks suitable for roasting.

- Arrange all the vegetables on a baking tray lined with parchment paper. Add the garlic cloves, drizzle with olive oil, and season with salt, pepper, paprika, and a little thyme. Toss everything well to coat the vegetables evenly with the oil and seasonings.

- Roast for 25–35 minutes, until the vegetables are tender and lightly browned. Roasting intensifies the flavors of the pumpkin and the other vegetables, giving the soup a richer, deeper taste.

- Prepare the Soup Base
Meanwhile, prepare the soup base. Heat a little olive oil in a large pot and add the sliced leeks. Sauté over medium heat for 5–6 minutes, until softened and slightly translucent. Add the peeled, diced potatoes and stir for another minute.
- Place the chicken breast on top of the vegetables. Pour in enough hot water or chicken stock to cover the ingredients, then simmer over medium heat until the potatoes are tender and the chicken is thoroughly cooked.
Remove the chicken breast from the pot and set it aside to cool slightly. You’ll add it back at the end, after blending the vegetables, to preserve the texture of the meat.

- Add the Roasted Vegetables
Once the chicken has been removed, add the roasted pumpkin, carrots, tomatoes, zucchini, and garlic to the pot. Pour in any juices left in the roasting tray, as they add even more flavor to the soup.
Let the vegetables simmer with the leeks and potatoes for another 5 minutes to allow the flavors to combine.

- Blend the Vegetables
Turn off the heat and blend all the vegetables using an immersion blender until the soup is completely smooth and creamy. If it seems too thick, gradually add a little hot water or chicken stock until you reach your preferred consistency.
Return the pot to low heat and gently stir in the heavy cream. Add the grated Parmesan and continue stirring until it melts and blends into the soup.
Season to taste with salt, pepper, thyme, oregano, and basil. Stir well and avoid bringing the soup to a vigorous boil to preserve its smooth, creamy texture.
- Add the Chicken
Using two forks, shred the cooled chicken breast into strips, then add it to the creamy soup. Stir gently and let everything cook over low heat for a few more minutes, until the chicken is heated through and the flavors have melded together.

- How to Serve Creamy Pumpkin Soup
Serve the soup hot in bowls, topped with extra grated Parmesan and a few additional strips of chicken for even more flavor.
If you enjoy spicy food, add a few slices of fresh chili or sprinkle some chili flakes over the top. I highly recommend this combination, as the heat beautifully balances the natural sweetness of the roasted pumpkin and the soup’s creamy texture.

- How to Store and Reheat
Store any leftover soup in an airtight container in the refrigerator for 3–4 days. Refrigerate it within two hours of cooking, rather than leaving the entire pot to cool slowly on the kitchen counter.
To reheat, transfer the desired portion to a saucepan and warm it over low heat, stirring occasionally. If the soup has thickened in the refrigerator, add a little water or chicken stock and stir until it returns to your preferred consistency. Heat thoroughly before serving, but avoid letting it boil vigorously.
