I recently received a generous batch of green beans, in different varieties. From the thin, long ones—the so-called “fidlute”—I love to prepare simple side dishes, quick stews, or salads like today’s.
This is a creamy, lightly garlicky salad that’s perfect as a cold snack or a light summer lunch.
The best part? It’s quick to make, requires few ingredients, and the result is sure to please you.
Probably one of the simplest green bean recipes I know.
Let me tell you how I made it!
Ingredients
500 g fresh green beans
150 g plain yogurt
2 tablespoons mayonnaise
1-2 garlic cloves, minced
Sare și piper, după gust
1 tablespoon fresh dill, chopped
Preparation
- Fresh green beans, if picked at the right time, are tender and cook quickly.
I cleaned them well, cut them into pieces about 4-5 cm long, and boiled them in salted water until they reached a pleasant texture—not too soft, not too crisp.
Then I drained them and immediately rinsed them with cold water to preserve their beautiful color and stop the cooking process. I set them aside to cool completely. - Once the green beans had cooled completely, I transferred them to a large bowl. I added creamy yogurt, mayonnaise, minced garlic, and a bit of finely chopped dill for freshness and flavor.
I seasoned everything with salt and pepper to taste, then gently mixed it all together, being careful not to crush the tender pods.
The salad went straight into the fridge, where it stayed until serving time. - This creamy green bean salad is versatile and pairs wonderfully in many ways: as a cold snack straight from the fridge, spread on a slice of toasted bread or crackers, alongside grilled meats, or even packed for lunch on the go.
