minutesBreakfast can sometimes be a bit of a challenge, and the usual omelet or sandwiches can start to feel a little boring. So, what do I have for you today? A simple, tasty, and colorful recipe: savory waffles with zucchini, spinach, and cheese.
They come together quickly, using simple ingredients, and the result is golden waffles that are slightly crispy on the outside and tender on the inside. The zucchini and spinach add freshness and a pop of color, while the cheese gives that savory flavor that’s hard to resist.
These waffles are perfect for breakfast, brunch, or even a quick snack during the day. Serve them warm, on their own, or with sour cream, Greek yogurt, or a quick garlic sauce for an extra burst of flavor.
Ingredients
2 eggs
200 ml milk
2 tablespoons yogurt
150 g flour
50 g melted butter or oil
100 g cheese (feta or grated hard cheese)
1 small zucchini, grated and well-drained
50 g fresh spinach, roughly chopped
1 spring onion, chopped
1–2 tablespoons fresh dill, chopped
Preparation method
- For these savory zucchini, spinach, and cheese waffles, we’ll need a few simple ingredients that come together to create a colorful and flavorful breakfast.

- In a bowl, combine the flour with the baking powder, salt, and pepper to create the dry mixture. In a separate bowl, whisk the eggs together with the milk, yogurt, and melted butter until you have a smooth, well-combined mixture.

- Gradually fold in the flour, stirring continuously to avoid any lumps. The batter should be slightly thicker than classic pancake batter.
Next, add the well-drained zucchini, grated cheese, chopped spinach, spring onion, and fresh dill. Season to taste and let the mixture rest for about 5 minutes before cooking.

- Preheat the waffle maker and lightly grease it with a bit of oil, if needed. Pour the appropriate amount of batter into the waffle maker and cook the waffles until they are golden, slightly crispy on the outside, and tender on the inside.
