I decided to give it a little twist (nothing ultra-mega fancy, I promise) – adding cottage cheese – and discovered a surprisingly delicious combination. What did I get? A slightly moist, delicate loaf with a protein boost and a modern touch, while still keeping everything we love about the classic recipe.
It’s the perfect dessert for breakfast, an afternoon snack, or even to take on the go. You can enjoy it plain, alongside a cup of coffee or tea, or elevate it with a thin layer of peanut butter, honey, or fresh fruit. Versatile and friendly, banana bread with cottage cheese is the kind of recipe worth trying and making again. I personally made it twice in a very short period because we loved it so much!

Ingredients:
3 ripe bananas
200 g cottage cheese
2 eggs
150 g brown sugar (you can use less, according to your preference)
50 g dark chocolate chips
200 g flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
a pinch of salt
optional: chopped nuts or dried cranberries
Preparation method:
- Note: To reduce sugar, consider using honey, maple syrup, agave syrup, or coconut sugar as alternatives to regular sugar. These alternatives add flavor and make the cake a bit healthier, but the batter may be slightly wetter, so be mindful of the baking time.

- To start, I preheated the oven to 175°C (350°F) and lined a loaf pan with parchment paper, setting it aside. Then, as you probably know by now, working quickly, I placed the bananas, cottage cheese, sugar, eggs, and vanilla extract into the bowl of my stand mixer and blended until I had a smooth mixture.


- I transferred the wet mixture into a large bowl and added the sifted flour, baking powder, baking soda, and salt. I gently mixed everything together, and finally, I added the chocolate chips, nuts, and a few dried cranberries, stirring once more until they were nicely incorporated.


- I transferred the mixture into the prepared loaf pan and sprinkled some more chocolate chips and roughly chopped nuts on top. I placed the pan in the preheated oven and baked for 40–45 minutes, or until the banana bread passed the toothpick test.


- I chose to serve the banana bread with fresh banana slices and a drizzle of salted caramel sauce, which adds extra flavor and a delicious contrast between sweet and slightly salty. It can also be enjoyed plain, with yogurt or peanut butter, or even with fruits and nuts, according to your preference.
