This Apple, Walnut & Chocolate Loaf is exactly the kind of recipe that’s easy to make with simple ingredients, yet always turns out delicious. The apples keep it moist and tender, the walnuts add texture, and the melted chocolate pieces make it truly irresistible.
Because I like to prepare desserts ahead of time or to share with loved ones, I doubled the recipe, which yielded two fluffy loaves. If you follow the recipe exactly as written below, you’ll get a generous loaf, perfect for a standard baking pan.
It’s a recipe that works wonderfully for weekends, or any time you have a few extra apples and want to turn them into a simple, flavorful dessert.
Ingredients
2 eggs
150 g sugar (about ¾ cup)
80 ml oil (about 1/3 cup)
200 ml milk (about ¾ cup + 1 tbsp)
250 g flour (about 2 cups)
1 packet baking powder (≈10–12 g)
1 tsp vanilla extract
2 packets vanilla sugar (optional)
a pinch of salt
½ tsp cinnamon
- For the filling:
4–5 medium apples, peeled and cut into cubes
a squeeze of lemon juice
70 g chopped walnuts (about ½ cup)
30 g desiccated coconut (about 3 tbsp)
100 g chocolate, broken into pieces (optional: chocolate with coconut)
Preparation method
- Recommended Pan:
Classic loaf pan, 25–28 cm (10–11 in), greased and lined with parchment paper. If you prefer, you can also use a round pan with a removable ring.
- Preparing the Apples and Chocolate
Peel the apples and cut them into small cubes. Drizzle them with a little lemon juice to prevent browning and to keep their fresh flavor. Chop the chocolate into small pieces, but not too finely.

- Mixing the Wet and Dry Ingredients
In a large bowl, beat the eggs together with the sugar and vanilla sugar until the mixture becomes fluffy and light in color. Add the oil, milk, and vanilla extract, and mix until well combined.
In another bowl, combine the flour, baking powder, salt, and cinnamon. Gradually fold the dry ingredients into the wet mixture using a spatula, mixing gently just until the batter is smooth and homogeneous.

- Adding the Apples, Nuts, Coconut, and Chocolate
Fold the diced apples, chopped walnuts, desiccated coconut, and chocolate pieces into the batter. Mix gently so that the ingredients are evenly distributed throughout the mixture.

- Baking
Pour the batter into the prepared pan and gently level the surface. Bake in a preheated oven at 180°C (350°F) for approximately 45–55 minutes, until the loaf is golden and passes the toothpick test.
Let the loaf cool in the pan for about 10–15 minutes, then transfer it to a wire rack and allow it to cool completely before slicing.

- Tip for a Beautifully Risen Loaf
Before placing the loaf in the oven, make a shallow groove down the center of the batter, about 1–2 cm (½ inch) deep, and pour approximately 2 teaspoons of oil into the groove.
Why this works: The groove gives the batter a place to rise evenly during baking, preventing random cracking along the edges.
The oil helps keep the surface smooth and glossy, resulting in a loaf with a uniform, professional appearance.
This tip is especially useful for fruit or chocolate loaves, which tend to have a denser batter and may rise unevenly.

- Serving
The Apple, Walnut & Chocolate Loaf is delicious served slightly warm or completely cooled. Once cooled, you can cut it into generous slices and serve it as is, or sprinkle a little powdered sugar on top for a more elegant presentation. The texture is tender and slightly moist thanks to the apples, while the combination of crunchy walnuts and melted chocolate pieces makes each slice wonderfully flavorful.
