minutesWe always have some vegetables in the fridge or in the kitchen that are no longer as fresh as they were a few days ago. Nothing is wasted, everything is transformed. This is how this stew was born, out of the desire not to lose delicious, natural ingredients full of vitamins. I chose to add peas to this stew, because I think the combination between the sweet taste of the peas and the sour taste of the tomatoes is very successful.
Ingredients
1 can with 400g of peas
1 kg of pork
1 bunch of green onions
1 sprig of leek
1 kg of tomatoes
2 red peppers
3 yellow bell peppers
2 white potatoes
1 carrot
3 tablespoons of oil
salt pepper
Directions
- It would be best to start by preparing all the vegetables. We wash them and chop them finely, apart from the potatoes, which we chop into cubes and grate the tomatoes.
- The meat is portioned into small pieces and put to temper in a pan with 3 tablespoons of oil. At first, we keep the fire high and brown it nicely on all sides. Season with salt and pepper.
- Remove the meat in a bowl and add the chopped vegetables, except potatoes and tomatoes. Cook on low to medium heat until they soften. We are going to add the tomatoes, the meat from the bowl, the potatoes and enough water to cover. Let everything boil for 20 min, stirring from time to time.
- Try a piece of meat, if it’s soft it’s ready, if not, extend the cooking time by a few minutes. The water evaporated when boiled and a wonderful sauce was formed in our pan, in which we can add the peas. Because I used canned peas, they were already well cooked, so I added them at the end and let everything boil on low heat for 5 minutes. Season to taste and turn off the heat.
- If you have fresh dill, add it now and mix. You can serve the stew as it is or with a good spoonful of sour cream. Good appetite!
