My family are big fans of salads that contain mayonnaise. Although I’ve recently managed to combine mayonnaise with various types of yogurt to reduce the calorie count, in this recipe, it’s not necessary. It is so delicious and prepared in the simplest way that any additional ingredient would slightly alter its taste. Let me show you how simple and quick it is to prepare!

Ingredients

  • 400 g boiled cauliflower

  • 80-100 g homemade mayonnaise

  • garlic (to taste)

  • salt and freshly ground pepper

Directions

  • This is one of the simplest and easiest salads to prepare. As you can see, the ingredients are easily accessible, and all that’s left to do is buy the cauliflower, in case you don’t already have it or aren’t sure what else to make with it.ingredients creamy cauliflower salad with mayo and garlic
  • I washed the fresh cauliflower thoroughly and cut it into small florets. In a large pot, I brought water to a boil and added 1 tablespoon of salt. Once the water started to boil, I added the cauliflower and boiled it for about 10 minutes, or until it softened. After it cooled completely, I shredded it as best as I could. You can also use a food processor if you prefer a smoother texture. We enjoy having small pieces of cauliflower in our salad.
  • I added mayonnaise to the finely chopped cauliflower. We prefer homemade mayonnaise, which I made using one raw egg yolk and two boiled yolks, 80-100 ml of oil, 1 teaspoon of mustard, and a pinch of salt. I also added chopped garlic (2-3 cloves), salt, and freshly ground pepper to the salad. I mixed everything well, and it’s ready to serve.
  • The salad can be served immediately on slices of toasted bread or crackers. In the summer, when tomatoes are in season, I like to serve this salad with slices of fresh tomatoes. A final tip: don’t overdo it with the garlic. Its aroma should be subtle.
