Ingredients
2 eggs
200 ml milk
2 tablespoons yogurt
150 g flour
50 g melted butter
100 g shredded cheese blend
100–120 g cooked bacon, cut into small cubes
150 g sautéed mushrooms (champignon or white mushrooms), roughly chopped
50 g fresh spinach, roughly chopped
1 teaspoon baking powder
Salt and pepper to taste
Optional: chopped spring onion or garlic powder for extra flavor
Preparation method
- A little tip to save time in the morning: you can prepare the bacon and mushrooms the night before, sauté them and store them in the fridge until the next day. This way, putting everything together in the morning becomes quick and effortless.
If you’d like to switch things up a bit, the bacon can be replaced with smoked ham or pancetta, and the mushrooms can be swapped for zucchini or roasted peppers, for a slightly different but equally delicious version.
