Somehow the recipe always turns out better after a bit of storytelling… So, you already know what we’re talking about today. I’m sure you can guess, since you’ve already seen the title and the pretty eye-catching photo (I hope!). So let’s turn our attention to some delicious oven-baked goodies.
I don’t know about you, but I absolutely love working with dough. And I love when my house smells like a full-on bakery. By the end, I almost always have flour in my hair — no idea how it gets there, by the way. Maybe you have a clue?
And yes, I’ll probably end up cleaning the counter while mumbling, scraper in hand, gathering flour dust and tiny pieces of dough. Buuut the ending… oh yes, the ending makes every mini-annoyance disappear instantly. Seeing something you worked on with love and attention rise beautifully in the oven, while the whole house smells so good that you start talking to yourself with a big smile and zero patience — that is, as the Americans say, a really big deal. And it truly is.
Fluffy chicken and cheese rolls — that’s my yummy pick for today.
Let me tell you why I chose them: they have cheese (and I’m a huge cheese fan, you already know), a soft milk dough, a little bit of chicken (optional, but sooo worth it), buttery aroma (hellooo, freshly baked bread with butter — already sounds like a winner!), and what else… oh yes, they’re perfect not just to impress guests, but also for breakfast, brunch, or even a hearty snack with friends during a little gossip session — shhht!
I wanted to write a completely different intro for this recipe because it’s exactly the kind of recipe that speaks to my soul. I’ll tell you in just a second how I made them — nothing complicated, I promise.

Ingredients:
For the dough (8–10 large rolls)
500 g all-purpose flour
250 ml warm milk
70 g melted butter
50 g sugar
10 g salt
7 g dry yeast (or 25 g fresh yeast)
1 egg (for the dough)
1 additional egg for brushing
For the creamy chicken and cheese filling
150 g cooked chicken breast, chopped
100 g grated cheddar cheese
100 g cream cheese (or mascarpone)
50 g finely grated parmesan
2 tablespoons sour cream or milk
1 teaspoon dried herbs (rosemary, thyme, oregano)
Freshly ground black pepper, to taste
For decoration
Grated parmesan, Seeds (optional: sesame, poppy)
Preparation method
- Note: If you prefer, you can also use store-bought dough — whether you’re short on time or a bit hesitant about making dough from scratch if you’re a beginner. However, my recommendation is to give homemade dough a chance, because nothing compares to it.

- Preparing the dough
Nothing new under the sun here — making the dough is pretty basic, I’d say. I added the flour to the bowl of the stand mixer and made a small well in the center. Then I poured in the milk, yeast, and sugar, mixed just enough to help the yeast dissolve, covered the bowl, and let it sit for about 10 minutes to activate.

- I then added the remaining ingredients for the dough and let the mixer knead everything for 8–10 minutes, until I got a soft, slightly sticky, elastic dough — wonderfully fluffy. I let the dough rise for 1–1.5 hours, until it doubled in size.


- Preparing the filling
Now we move on to the creamy and delicious part. We’ll keep things simple and work in just one bowl (easy, right?).
First, we mix the cream cheese with the milk or sour cream — I used sour cream — then we add the herbs, plus salt and pepper to taste. Be careful with the salt, since the cheeses are already salty!
Next, we add the chicken and the grated cheeses, mixing everything until well combined. Voila! We now have the perfect creamy filling for our rolls.
If you have any fresh herbs on hand, feel free to add them — they bring an extra touch of flavor and freshness.

- Shaping the rolls
Just look how beautiful the dough turned out! Perfect — let’s move on to shaping the rolls.
We roll out the dough on a lightly floured surface into a rectangle of about 40×30 cm. Then we cut it into 8–10 triangles (and don’t worry about the uneven edges — you can simply press them together and shape another triangle).

- Filling and rolling the rolls
Place a generous spoonful of the creamy chicken-and-cheese filling at the base of each triangle. Roll the dough from the base toward the tip, shaping either crescents or larger croissant-style rolls — whichever you prefer.
Of course, if you’d like, you can also give them a slightly rustic look while rolling them, just like I did.

- Baking
Place the shaped rolls on a baking tray lined with parchment paper, leaving a little space between them so they can rise nicely. Cover them and let them proof for another 20–30 minutes before baking.

- Brush the rolls with beaten egg and, if you like, sprinkle some parmesan and seeds for extra texture and visual appeal. Bake for 18–22 minutes at 200°C (390°F), until golden and fluffy. Let them cool for 5 minutes before serving — though you’ll probably be tempted to try one right away!


- These fluffy chicken and cheese rolls are delicious both warm and cold. When freshly baked, the cheese melts beautifully inside, and the soft, buttery dough will win you over instantly.
You can serve them plain, alongside a light salad, or even with a creamy soup. They’re perfect for breakfast, brunch, or as a hearty snack during the day.

- And if you happen to have any leftovers (though that’s unlikely!), they keep very well in a closed container at room temperature until the next day. We even turned them into sandwiches, and believe me, they were delicious.
Simple, flavorful, and with that bakery-fresh aroma — I’m really proud of these rolls! I say they’re definitely worth trying: bring a little bakery magic closer to your heart, right in your own home!
