Sometimes, the most charming recipes come from… whatever we have left in the fridge.
That’s exactly how this quick snack came to be. I had a few leftover sausages, and since we really loved the dough I used for a galette recently, I decided to try it in a new form. The result? A crispy and delicious twist — a great alternative to store-bought puff pastry.
I’m always on the lookout for quick snack ideas — the faster, the better. And this one turned out to be perfect not just for lunchboxes or picnics, but also as a fun appetizer for movie night or while chatting over a drink with friends.
Whatever time of day you choose to serve them, here’s my honest advice: make a double (or even triple) batch — they disappear fast!
They came out so cute and tasty that I barely managed to snap a few photos before they were gone.
Let me show you just how simple they are to make!

Ingredients

  • Ingredients for the dough
    200 g white flour (type 000 or 550)

  • 100 g cold butter (at least 80% fat), cut into cubes

  • 2 tablespoons sour cream (12–20% fat)

  • ½ teaspoon salt

  • ½ teaspoon oregano (optional)

  • 2–3 tablespoons ice-cold water (only if needed – I didn’t use any)

  • For assembling
    5–6 sausages (that’s what I had)

  • 1 egg, beaten (for brushing)

  • Sesame seeds, poppy seeds (for sprinkling)

  • Optional: your favorite dipping sauce for serving

Preparation

  • Everything is simple and accessible, and the recipe can easily be adapted based on what you have in the fridge. If you don’t have sausages, you can replace them with thin or small-sized ones – they’ll turn out just as tasty!
    A little tip when making the dough: work quickly and keep all ingredients as cold as possible. That way, you’ll get a tender and crispy texture.
  • In the bowl of a food processor (fitted with blades), I added the cold cubed butter, flour, salt, and a bit of oregano for extra flavor. I pulsed until the mixture resembled fine crumbs, like a light crumble.
    Then I added the sour cream – which brings elasticity and makes the dough easy to handle – and continued mixing until a compact dough ball formed.
    I wrapped the dough in cling film and placed it in the fridge. Ideally, it should chill for at least 30 minutes, during which time you can prep the filling or toppings.
  • After the dough had chilled, I took it out and rolled it out on a lightly floured surface into a thin sheet — not too thin though, about 3–4 mm thick.
    To cut the dough, I used a pastry wheel and sliced it into long strips. But a sharp knife works just as well — the important thing is to keep the strips fairly even so they bake uniformly and look neat.
  • Since I wanted some cute (and practical) mini snacks, as you probably guessed, I cut the hot dogs in half.
    Of course, you can leave them whole if you prefer a more filling option — it all depends on your taste and needs. Either way, they turn out delicious!
  • I took each half of the hot dog and wrapped it with strips of dough, making sure to seal the edges well so they wouldn’t come undone while baking.
    I placed the wrapped hot dogs on a baking sheet lined with parchment paper, then brushed them with beaten egg to get a beautiful, golden, and shiny crust.
  • Finally, I sprinkled sesame and poppy seeds on top for extra flavor and an appetizing look.
    I baked everything in a preheated oven at 180°C (top and bottom heat) for about 20–25 minutes, until the dough turned golden and crispy.
  • And just like that, after a few minutes in the oven, we got fluffy sausages wrapped in a crispy, flavorful dough, perfectly golden-brown.
  • They’re ready to be enjoyed as a quick, tasty snack or as a delicious appetizer that will delight any meal — whether it’s a cozy family evening or a gathering with friends.
