I’ve known it since childhood and, honestly, I’ve never felt the need to reinvent it. For me, these “peaches” have always meant something simple: tender shells, slightly crisp on the outside, and a sweet filling made from jam and walnuts, just the way I grew up with.
I’ve never associated them with fancy creams or complicated combinations. That authentic taste comes from simplicity—the richness of a good, slightly thick jam and the walnuts that give them their unmistakable texture and flavor.
Every time I make them, it feels like stepping back into those moments: the quiet, the sweet aroma filling the kitchen, and the excitement of tasting the first “peach,” still lightly coated in sugar.
I recently prepared them in a soft spring setting, surrounded by flowers and warm colors, and at the end I placed them on my AQUARELLE, ART OF DINING BY HEINNER dinnerware set. It blended beautifully with the whole mood of the recipe and completed the moment without taking away from the simplicity that defines it.
Ingredients
- For the shells:
4 eggs
250 g sugar
250 ml oil
1 packet baking powder (10 g)
~600–700 g flour (added gradually, until you get a soft, easy-to-shape dough)
- For the filling:
250 g jam (apricot, peach, or plum – preferably thicker)
150 g ground walnuts
the crumbs scooped from the shells
vanilla or rum extract
- For decoration:
200 ml milk
yellow food coloring
red food coloring
sugar for coating
Preparation method
- This recipe makes about 28 peach cookies (I got 57 shells), and one or two are usually enough for a serving… or maybe not.

- We start with the dough, which is the base of these peach cookies. Crack the eggs into a large bowl and mix them with the sugar until you get a smooth, slightly creamy mixture. There’s no need to overmix, just enough for everything to come together. Gradually pour in the oil, continuing to mix, then add the baking powder at the end.


- We start incorporating the flour little by little, until the dough becomes soft, easy to shape, and no longer sticks to your hands. It’s important that it isn’t too firm, because we want tender shells.


- We take small pieces of dough and shape them into balls, which we place on a baking tray lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for about 15–20 minutes. Make sure they stay light in color; don’t let them brown too much.


- Once they have completely cooled, comes the most “therapeutic” part – gently hollowing them out without breaking them. Keep the crumbs, as they will give the filling its authentic flavor.


- For the filling, mix the hollowed-out crumbs with your chosen jam, preferably a thicker one, and the ground nuts. If you want a more intense color and a slightly different flavor, you can also add a little cocoa. Then pour in the rum or vanilla extract, and mix until you get a cohesive, slightly moist mixture—but not liquid.


- Fill each half with this mixture and press them together two by two, forming the peaches. They’re already starting to look just like we know them, right? Remove any excess from the edges and continue until all the peaches are formed.


- For decoration, prepare a little milk and add yellow food coloring, then quickly dip each peach in it. Don’t leave them long, just enough to pick up some color. Then, using a little red food coloring, gently touch one side for that natural ripe peach effect.


- Finally, roll them in sugar, and at this moment they become exactly that childhood dessert – colorful, fragrant, and irresistible.


- The peaches sit beautifully on a platter, and honestly, it’s hard to stop at just one. They’re tender, slightly crisp on the outside, and the sweet filling with jam and nuts makes them just like we remember from childhood.
